Today chef Rafa brings to Claudia&Julia's kitchen some magnificent squid with onions and sobrasada, an easy and quick recipe typical of the Balearic Islands. With the personal touch of the sobrasada it becomes a dish with a strong, truly tasty flavor. A recipe that you can serve either as a first course or as a main, a versatile and handy dish.

This magnificent recipe is prepared in the new Balti Dish by Le Creuset, a wonderful casserole, made of vitrified cast iron, that is extremely versatile in the kitchen: you can use it for sautés as well as for rice dishes, frying, like a wok... And its design is truly beautiful!

You will find the step-by-step recipe and the ingredients below, though we invite you to watch how Rafuel makes it in the following video:

Ingredients (for 2 people)

  • 1 onion
  • 8 cleaned squid
  • Olive oil
  • 80ml of dry white wine
  • Salt
  • 2 pieces of sobrasada

Preparation

  1. We cut the onion to make the sofrito and put it in the Balti Dish by Le Creuset with a pinch of salt, and then add the squid.
  2. We add a little olive oil and increase the heat.
  3. Once the water has evaporated, we pour the white wine until it covers the squid. We let it simmer until it evaporates (about 10 minutes).
  4. If we want, we can already eat the squid with its sofrito (they are already delicious at this point!), but if we want to give it our personal touch, this is the moment to add the sobrasada in small pieces on top, until it melts.

The recipe is now ready to be brought to the table and enjoyed. Presented directly in the Balti Dish it looks very impressive. Serve it with a bit of bread — it's delicious!
