After the holidays, it's time to eat at home and in a healthy way. Our recipe today talks about a very useful and appreciated ingredient: pasta. If we know how to combine a good pasta with good ingredients, we can achieve truly luxurious dishes.

Today I have decided on tagliatelle, a type of elongated pasta, small in width and flattened in shape, which is part of the group of dried pastas of Italian origin. Although it is known throughout Europe and other places directly from Italy, there is controversy over its origin, since in China noodles similar to tagliatelle have been prepared for more than a millennium before Italy. The difference lies in the flour, Chinese ones are made from rice or soybeans, while Italian tagliatelle are made from wheat.

To cook this pasta I used a saucepan, but when it came to sautéing it I used my new Saute from “Le Creuset” . Now we move on to the preparation.

Ingredients (for 2 people):

200 gr of noodles

4 large chanterelles

2 cloves of garlic

Rosemary to taste

Parmesan to taste

Oil, pepper and salt

Preparation:

We put the pasta in boiling salted water. We look at the cooking time recommendations. It is up to each person whether they prefer their pasta more “al dente” or not.

Meanwhile, slice the garlic cloves and cut the chanterelles into small cubes. In our Saute pan, add 3 tablespoons of oil and if you want, you can add a little butter (the size of a walnut). When the oil is hot, add the sliced ​​garlic and brown it, being careful not to burn it. Add the chanterelles and brown it for about 10 minutes.

When the pasta is ready, add it to the pan and sauté, stirring with a wooden spatula so as not to scratch it. Add the rosemary to release its essence. If you don't like it, you can leave it out. Season with salt and pepper and continue sautéing for about 5 minutes, no more.

A tip: when I add the noodles, I add two or three tablespoons of the same cooking water; this way the noodles don't stick together.

Ready to serve. We can add grated parmesan if we like.
