How tasty! Potato and carrot rösti, a dish you'll make in no time and that you will undoubtedly enjoy at any lunch or dinner. Are you up for preparing this recipe by Lola, author of Loleta?
I bring you one of my favorite dishes when I travel to Switzerland or Germany, the rösti. It's a very popular potato dish, which was traditionally served at breakfast but today has become a fantastic side for meats and vegetable dishes. I also love having it as a main course, accompanied by a bit of salad or eggs.
Although rösti is almost always made with potatoes, I preferred to also use carrots because that's how I like it best. And I served it with an egg to complete the dish.
You can make it large, the size of the pan, but I love making them small, in a more individual format. I make it in the Le Creuset cast-iron pan, because iron reaches the perfect temperature to get that crispy touch, and it also works to bring it straight to the table because it's very pretty!

Ingredients
- 2 potatoes
- 3 carrots
- 2 tablespoons all-purpose flour
- Salt
- Freshly ground black pepper
- Olive oil or butter
- ½ shallot
- 3 eggs (optional)
Preparation
- In a Shallow Casserole Efficient Bra fill with water halfway. When the water is boiling, add the potatoes and carrots and let cook for only 5 minutes. After this time, remove and cool in plenty of cold water.
- Peel the potatoes and carrots. With the help of the KitchenAid food processor, slice the carrots and potatoes into julienne. Put them on a plate and add the flour and season with salt and pepper.
- Add the finely chopped shallot and mix well.
- Form patties about 8 cm in diameter.
- Heat the oil or butter in our Le Creuset cast-iron pan and wait until it's hot. Add our patties (one or two at a time) and let cook for 3 minutes on one side before flipping them (they should be golden and crispy).
- Fry some eggs in a pan (they turn out great in De Buyer iron pans, especially if you like them with lacy edges!). This step is optional.
- Serve accompanied by a bit of quark cheese sprinkled with parsley, smoked salmon or the fried eggs … or a bit of everything!

Receta tuneada. Como no he conseguido hacer las tortitas he añadido toda la masa junta a la sartén. Me ha salido como si fuera una tortilla de patata. ¡muy contenta con la receta! :-)

Muchas gracias por la receta. Una pregunta: los tres huevos que aparecen en los ingredientes son para feirlos de acompañamiento o hay que incorporarlos en la mezcla de zanahorias, patatas,…en algún momento? No ví ese detalle en el apartado de elaboración.
