Ingredients
For the pears:
- 4 conference pears
- 10 g of brown sugar
- 15 g of butter
- Juice of 1/4 lemon
- 1 vanilla bean
- 3 star anise
- 50 ml of water
For the mixed berry jam:
- 300 g of frozen mixed berries
- 50 g of brown sugar
- Juice of half a lemon
- 20 ml of water
To serve:
- Vanilla and macadamia ice cream
- Fresh mint leaves
Preparation
- We prepare the jam: For the jam, mix all its ingredients in a saucepan and cook over medium-high heat for 10 minutes. It is recommended to make the jam in advance so it is cold at serving time (a few hours before or even the day before).
- Place the Dupla pan over low heat so it begins to warm. While you prepare the pears, flip it after a couple of minutes so both sides heat up (you can also separate the two pans and place each on independent burners).
- We prepare the pears: Cut the pears in half, peel them and remove the seeds and stem. Place them in the Dupla Prior pan by Bra, spread across the pan with space between them.
- Add sugar, butter cut into cubes, lemon juice, water, the vanilla bean split in half, and star anise over the pears in the pan. Close the pan and cook over medium heat for 5-10 minutes.
- After that time, flip the pan, making sure all the pears have turned over correctly, and cook for an additional 5 minutes. Turn off the heat and let them cool down.
- Plating: Once the pears are ready, serve them warm or chilled from the fridge. Place two halves per person and add a couple of tablespoons of red fruit jam. Optionally, accompany with a scoop of vanilla and macadamia ice cream and garnish with mint leaves to give a fresh touch to the dish.
Notes:
- You can prepare everything the day before serving, but if you do, remove it from the fridge a few hours beforehand so the pears are at room temperature.
- Don't overdo the vanilla ice cream, if using it. The star should be the pears, and the contrast with the intensity of that red fruit jam.
- Pears also go very well with almonds. You can garnish with some toasted sliced almonds.
