To accompany the sandwich and enjoy a balanced meal, I have chosen a simple green salad of tomato, lettuce and spring onion that I have dressed with a fantastic balsamic vinegar from Modena that comes with a super practical spray and that you can find in the “ Pantry ” section of Claudia&Julia.

Ingredients (for 4 people)

  • A loaf of bread of the best quality you can find
  • 2 golden apples
  • 2 organically raised chicken breasts
  • 1 wedge of brie cheese
  • mayonnaise to taste
  • salt
  • black pepper

Elaboration

  1. Light the barbecue and place the apples on the grill. Lower the lid and allow the apples to roast over medium heat. After 10 minutes, turn them over and continue cooking with the lid down until they are cooked through. In total, you should roast them for 20 to 25 minutes. Remove and set aside.
  2. Cut the chicken breasts into fillets and season them with salt and pepper. Cook them on the barbecue.
  3. Assemble the sandwiches as follows: spread mayonnaise on the bottom of the bread, then place the chicken breast, a little brie cheese and the roasted apple without the skin or seeds on top. The quantities are up to you.
  4. Place the sandwiches on the grill and lower the lid. Leave the heat on low for 3 minutes. This will warm up the bread and melt the cheese.
  5. Serve immediately accompanied by a green salad.
