If you're looking for a quick dessert, simple and always a hit, these lemon and cream cheese mousse cups are the perfect choice. With very few ingredients and no need to complicate things in the kitchen, you'll have a fresh, creamy, flavorful dessert that comes together in no time. With very few ingredients and the help of your KitchenAid, making this dessert is as easy as letting the machine do all the work for you: from whipping the cream to mixing the ingredients just right to achieve that creamy, smooth texture that makes these cups a true delight.

Here's the step-by-step video, you'll see how easy it is! You can serve it in glasses (I think it looks super elegant), but you can also serve it in mini cocottes.

 

Ingredients

  • 20-40 g cookies (you can use Maria-type or Digestive-type)
  • 200 ml whipping cream
  • 200 g cream cheese like Philadelphia
  • 150 g lemon curd (lemon Curd Tiptree)
  • 1 lemon
  • 1/4 tbsp Madagascar vanilla extract
  • 75 g powdered sugar

Preparation

  1. Place the cookies in a food chopper or food processor, and pulse until you have small pieces (just a few seconds, we don't want cookie dust, just a bit of crushing). If you don't have a chopper, crush with a mortar and pestle.
  2. Place the pieces at the bottom of the glasses or cups where you will serve the dessert.
  3. Put the whipping cream in the KitchenAid mixer and whip it with the whisk attachment (beat at high speed until soft peaks form). Don't get distracted or walk away from it; you'll know that with the mixer it's a matter of seconds to make whipped cream, and if you overdo it you'll turn it into butter).
  4. When the cream is whipped, change the whisk attachment for the flat beater.
  5. Add to the cream the cream cheese, the lemon curd, the vanilla extract, the lemon zest and the powdered sugar. Mix everything on low speed (level 2) until you obtain a smooth, uniform texture.
  6. Pour this cream cheese and lemon mixture over the cookie base in the glasses. Place the glasses in the refrigerator and let rest for at least 6 hours so they firm up and the lemon aroma settles.
  7. Before serving, garnish with a lemon slice (if you have a sweet tooth, you can garnish with a cookie), a bit of whipped cream and some blueberries or raspberries. Ready to enjoy!
