This cinnamon ice cream recipe is like bringing a little bit of summer to your mouth with every spoonful. The recipe I am sharing with you today is for an ice cream that is very easy to make and is addictive. The possibility of preparing ice cream at home makes it much more enjoyable, not only because of how delicious it is, but because we can choose at all times which ingredients to prepare it with .
In case I haven't mentioned it before, I love ice cream! It is part of the memory of good weather, sunny days, moments of rest in good company, quiet walks by the sea, refreshing desserts to beat the heat and holidays.
Here is the recipe for this ice cream, which we made today with the KitchenAid ice cream maker , one of the most popular accessories for the KitchenAid food processor from the brand.
If you like the taste of cinnamon like I do, I have no doubt that you will love it, and it is perfect as a dessert or for a mid-afternoon snack. Or mid-morning, why not?
Ingredients for ice cream:
- 400 ml of liquid cream (35% mg)
- 400 ml whole milk
- 130 g icing sugar
- 5 egg yolks
- 2 tablespoons of cinnamon
- 50 g melted butter

100 g brown sugar
Preparation
- Heat the milk, cream, sugar and half of the cinnamon in a saucepan over medium heat, stirring to combine everything well. Once mixed, turn off the heat. It should not boil.
- In the bowl of your KitchenAid mixer , with the whisk attached, add the egg yolks and beat them for about 2 minutes, at medium speed (4).
- Reduce the speed and, without stopping the mixer, pour in a little of the hot mixture from step 1 (approximately 200 ml). Continue stirring with the whisk until it is well integrated with the eggs and when it is, add it to the saucepan with the rest of the mixture from step 1.
- Cook over medium heat, stirring constantly, until the mixture thickens (about 8-10 minutes).
- Pour the heavy cream into a bowl and let it cool to room temperature before transferring it to the refrigerator. Allow the mixture to chill in the refrigerator for at least 4 hours (you can leave it overnight).
- Before removing the mixture from the fridge, mix the melted butter with the sugar and the rest of the cinnamon in a bowl. This will give the cinnamon a crunchy touch, which will also enhance its flavour.
- Remove the KitchenAid ice cream maker attachment from the freezer and attach it to your food processor. Set the KitchenAid to speed 1 and, once it is running, pour in the cold cream. Allow it to work for about 15 minutes, until it starts to have a smooth consistency.
- Without stopping the mixer, add the crunchy cinnamon from point number 6 and continue mixing for 1 or 2 more minutes.
- Portion the ice cream into glasses or place it in a freezer-safe container and store it there, ready to eat whenever you want.
Grades
- If you prefer, you can put all the cinnamon in at the beginning and not make it into a crunchy mixture. In that case, you won't need either the butter or the brown sugar to make the recipe. You can also put in less cinnamon if that's more to your liking.
- For those with a sweet tooth, with a splash of liquid caramel, this ice cream is delicious.
- Another option you have is to add the peel of a lemon, along with the rest of the ingredients when heating them. You will see how it reminds you of the taste of milk meringue.
