Today is pizza day. Who doesn't like a delicious homemade pizza? I think not many people do.

It is very easy to prepare and even more so with a base like the one I present to you today.

But I'm going to tell you a little bit about the history of pizza, which I'm sure many of you already know... It seems that pizza was born in Naples. In fact, it is the most popular dish of Neapolitans. It has evolved over time in terms of its components and how it is made.

It is usually a simple food, the ingredients are water, oil, flour and yeast. We also know that pizza has undergone many modifications and we can find many variations. Each area of ​​the world has a different concept of “pizza”.

We will make this recipe with three types of cheese, with bacon or pancetta and arugula. I also used a fantastic ceramic tray from “Emile Henry” that allows you to cook the pizzas so that they are cooked to the perfect crispy point. You can even take it on the tray to present it at the table. It will keep the heat and distribute it evenly.

You can use it for many different purposes, not just for our pizzas, as it can also be used as a tray for many presentations, such as cheeses, sausages, salads with bowls of dressings...

Ingredients

For the pizza dough

  • 200gr of water
  • 50gr of oil
  • 25gr of fresh yeast
  • 400gr of strong flour
  • A pinch of salt

For the filling
  • 150gr of tomato sauce with basil and oregano
  • Idiazabal cheese, parmesan and gouda to taste
  • ​200gr of bacon​ ​or pancetta
  • Arugula leaves for garnish
  • Oregano and oil

          Preparation

          From the traditional mass

          1. In a bowl, mix the water with the oil, then add the yeast and mix again. In another bowl, add the flour with the salt, form a volcano and add the previous mixture. Mix everything until the dough comes away from the sides.
          2. Now comes the time to knead. We fill the base that we are going to work with with flour. We begin to work the dough with our hands, we must knead it so that it is as elastic as possible and it rises better. The best way is to stretch it like a churro and then twist it into a spiral, doing this several times.
          3. Then we continue kneading the whole dough for approximately 10 minutes. Kneading is the trick to a good dough. Now put it in a bowl, cover with a damp cloth and let the dough rest for about 30 minutes.

          Preparation

          1. Preheat the oven to 200º. Sprinkle the tomato sauce on the base and spread it over the entire base. You can use a spatula to help you.
          2. Add the three types of cheese all over the pizza, to taste, depending on how much you like cheese. Add bacon all over the pizza. Finally, add the rocket leaves and a little oregano. Leave some rocket leaves for garnish.
          3. I always add a little oil to my pizzas before putting them in the oven. Put them in the oven for about 20-25 minutes at 180º. You know that every oven is different, so keep this in mind.
          4. Your arugula pizza with bacon and cheese is now ready to eat.

          Qué buena pinta tiene la pizza, seguro que está rica, pero es que además Luisa hace unas fotos horriblemente bonitas!!

          Llevo detrás de la bandeja bastante tiempo, me gusta porque sé que luego me va a servir para otras presentaciones, pero me echa para atrás porque también tengo el capricho de comprar una piedra par a pizza. Eso sí, el día que me decida, ¡estoy deseando preparar una como esta!
