About the sugar-free Parmesan cake recipe

The sugar-free savory Parmesan and chive cake recipe is not only viable but delicious. The absence of sugar in this type of recipe is completely normal and desirable, given its savory nature and the presence of ingredients with strong flavor profiles like Parmesan, chives, and spices. Sugar is usually a key ingredient in cakes and other sweet preparations to balance flavors and contribute to texture, but in savory recipes, other components like butter, milk, and cheese fulfill that role, providing moisture, fat, and flavor that combine to create a fluffy texture and a rich, complex taste.

The combination of ingredients in the recipe gives the cake an excellent structure thanks to the cake flour, which is ideal for this type of preparation for its ability to create light and airy textures. Baking soda, for its part, acts as a leavening agent in the absence of sugar, helping the cake rise and remain fluffy (combined with the action of whisking, which incorporates air into the batter). Salt, black pepper, paprika, and especially the grated Parmesan add depth and complexity to the flavor, while the chives add a fresh and slightly spicy note that contrasts wonderfully with the richness of the cheese and butter.

Ingredients

  • 3 XL eggs
  • 650 ml milk
  • 3 tbsp melted butter
  • 60 g finely grated Parmesan
  • 240 g cake flour
  • 1 tsp salt
  • 1 level tsp baking soda
  • 1 tsp ground black pepper
  • ½ tsp paprika
  • 4 spring onions
  • Butter or non-stick spray, to grease the ramekins

Preparation

  1. Preheat the oven to 200°C.
  2. Chop the spring onions very finely and set aside.
  3. Grease your Le Creuset ramekins with butter or non-stick spray.
  4. In a bowl, beat the eggs with a whisk, and add the milk and melted butter.
  5. Next, add the Parmesan cheese.
  6. Add the sifted flour, baking soda, salt, pepper, and paprika, continuing to mix with the whisk.
  7. Once combined, add the very finely chopped chives, and mix until you obtain a homogeneous batter, with the onions distributed throughout the batter.
  8. Pour the mixture into the prepared ramekins and bake for 35 minutes or until golden and fully cooked through.

Hola Cristina,

Sí, puedes hornearlo en un único molde, pero tendrás que darle más tiempo, ya que necesitará algunos minutos más.

Esperamos que te guste la receta. Si la pruebas, ya nos contarás ;)
