I'm bringing you some bites that are as easy to make as they are fun: these are honey and vanilla little cakes shaped like Easter bunnies. They are perfect for decorating the mona with edible figurines, or to serve individually with coffee, for breakfast or as an afternoon snack.
These are little sponge cakes that you can decorate with different touches to make them special, or you can make them plain; although they won't be as showy, they'll be just as tasty. They're delicious! They have a lovely vanilla aroma and a very fluffy texture. Dare to make them and they will surely be a hit! What do you say, shall we get our hands in the dough?
Baby Bunny mold by Nordic Ware
Ingredients
- 175 g cake flour
- 1 tsp baking powder
- ½ tsp salt
- 180 ml milk
- 110 gr honey
- 1 tsp lemon juice
- 1 vanilla pod, seeds removed
- 125 gr butter, softened
- 120 gr sugar
- 2 large eggs
Preparation
- Preheat the oven to 180 ºC. Prepare the Baby Bunny mold by Nordic Ware with a little butter and flour or with non-stick spray.
- In a medium bowl, mix the flour, baking powder and salt. Set aside.
- In another bowl, mix the milk, honey, lemon juice and vanilla seeds and set aside.
- In a stand mixer, such as a KitchenAid, beat the butter and sugar together until combined. Next, add the eggs and beat again until everything is uniform.
- Add half of the flour mixture and then half of the milk mixture and mix well before adding the remaining two halves.
- Continue beating until you have a uniform batter and then pour it into each cavity of the previously greased mold.
- Give the mold a small tap on the bottom to help release air bubbles from the batter so they rise to the surface.
- Bake for about 25-30 minutes or until a toothpick inserted into the center of the middle bunny comes out clean, which means the batter is cooked. You can also use the Nordic Ware thermometer, which tells you visually and quickly if your cakes are ready.
- Let cool for about 10 minutes before inverting the bunnies onto a cooling rack.
For the frosting (optional):
50 gr cream cheese, softened
100 gr butter, softened
200 gr powdered sugar
2 tbsp milk
1 tbsp vanilla extract
- To frost, mix the cream cheese and butter and heat in the microwave until very soft, 10 to 20 seconds. Mix to combine. Add the vanilla and powdered sugar, stirring until smooth and combined. Use milk to thin the frosting to the desired consistency for covering the cakes or decorating the parts you want. Serve immediately or refrigerate until serving time.

- This mold I used for the recipe is perfect for Easter, but you can certainly use it the rest of the year. It has a very pretty and fun design, so the little ones will love it for enjoying beautiful muffins or little cakes at breakfast or snack time.
- Once you have the little cakes made, you can decorate them however you like. One option, for example, could be to fill them with creamy chocolate or some jam; or you can even decorate them with a bit of colored fondant to give them a more playful touch.
- Nordic Ware also has molds very similar with a duck shape. The same recipe with the same quantities will work for that other mold as well.
