Raquel, author of Los Tragaldabas, brings us a very special recipe today: a cake in the format we love, the brilliant and delicious bundt shape, combined with the flavor of an aroma many of you enjoy every day, coffee. A fabulous proposal to start the day!
I am a coffee enthusiast, I love it!!! I can almost tell you I'm addicted to it. It would be impossible to start the day without a hot coffee to wake up my whole body. That is why in this bundt cake recipe coffee is a main ingredient, besides that very particular flavor: the aroma it gives is indescribable!
For all these kinds of preparations, without a doubt the raw material is fundamental. Therefore, I have chosen Malongo ground coffee. But if we continue with the bundt, another thing to consider is the pan. And I must be honest: never, and I mean never, have mine come out as good as in the Nordic Ware pans. When this pan fell into my hands I thought "How long did it take me to buy it! This pan is perfect for making your bundts simply spectacular. Its central chimney allows heat to distribute perfectly during baking and the quality of its aluminum makes it one of the favorite pieces for every baking enthusiast. Ingredients
225gr unsalted butter at room temperature
230gr. white sugar
4 eggs
100ml of coffee
225gr flour
2 tablespoons baking powder (Royal baking powder)
A pinch of salt
One tablespoon of freshly grated ginger
Preparation
1. Preheat the oven to 180º
2. Mix the butter and sugar until it becomes a creamy mixture and has lightened in color.
3. Add the eggs one at a time, lightly beaten. Do not add the next one until the previous has been perfectly incorporated into the mixture.
4. Sift the flour with the baking powder, ginger and salt in a bowl.
5. Add the flour to the mixture in three or four additions, alternating with the coffee, beating until fully incorporated.
6. Grease the pan with our release spray.
7. Pour the batter into the pan distributing it well. Give a few taps on the countertop to make sure the batter gets into all the grooves of the pan and any trapped air comes out.
8. Bake for 50-60 minutes. Check with a skewer before removing from the oven.

9. Remove from the oven, let cool on a rack for 10-15 minutes.
10. Unmold, let the bundt cool on the rack until completely cold.
11. Serve on our cake stand and enjoy with a delicious café con leche.

Lamento decir que algo debe andar mal en las proporciones de ingredientes. Me ha sucedido exactamente lo mismo que al comentario anterior, ha quedado totalmente hundido en mi molde nordic ware y es la primera vez que me pasa con un bundt cake :-( da la impresión que hay demasiada levadura. Saludos
