A frittata is nothing more than an omelette, accompanied by almost anything you like, which instead of being turned over to be cooked on both sides is finished in the oven . This way of cooking the omelette is originally from Italy, but today we bring you a very national frittata, because we are going to prepare it with rice pudding and a fruit that goes perfectly with it, the reineta apple, which we will caramelize beforehand without any added sugar.

You have to try the result of this combination, it is exquisite, with the contrast of flavours and textures. And the presentation, as you can see, is much more special than a traditional omelette, since with the colours of the blood sausage it tends to be a bit dark and not very appetising.

The final cooking in the oven allows for two things. On the one hand, a nice presentation, because we don't have to keep turning the frittata to finish it, and also an extraordinary juiciness, because it is ready in 5 minutes in the oven.

I have prepared it with my Le Creuset cast iron skillet , which is wonderful for these preparations that go from the stove to the oven. Even though it does not have a non-stick coating, when it reaches such high temperatures, it seals the food perfectly and does not stick at all. You take your frittata out once it is cooked, as if it were a non-stick frying pan, as you can see in the image, but since it is made entirely of iron, you do not have to be afraid of it being damaged in the oven, the handle or the non-stick coating.

Let's get on with the recipe, which is very simple and you can have it in no time:

Ingredients (for a 23-26cm skillet , 8 servings)

  • 6-7 eggs (L) preferably from happy hens*
  • 250g crumbled rice blood sausage
  • 1 sweet onion cut into burnoise
  • Extra virgin olive oil
  • 1 knob of butter
  • 1 large reineta apple, peeled, cored and cut into wedges
  • Parsley to sprinkle
  • Salt and pepper to taste

*I have used eggs from a friend's chickens, which as you can see give it an extraordinary yellow color due to the way they are fed.

Preparation

  1. Preheat the oven to 180ºC, heat from above and below.
  2. We put a knob of butter in a non-stick pan and while the butter melts, we peel, core and cut the apple into wedges.
  3. When the butter has melted, over medium-high heat, brown the wedges on both sides. , until they are soft (but be careful, not broken!). Keep in mind that the apple will only be in the oven for about 5 minutes and our apple, in addition to being golden, must be tender, but it must keep its shape. Set aside.
  4. We put our Le Creuset skillet on medium-high heat, with a splash of extra virgin olive oil and when it has reached temperature, we sauté the onion that we have previously cut into small squares (brown).
  5. Meanwhile, peel the blood sausage and crumble it. When the onion is transparent, add the crumbled blood sausage to the pan and stir it a few times.
  6. In a bowl, beat the eggs for the omelette and when the blood sausage is sautéed with the onion, add them to the skillet , spreading the filling with the egg evenly over the entire surface. Let it cook.
  7. When we see that the omelette is starting to set, after about 4 or 5 minutes, we place the apple wedges on top.
  8. We put our frittata in the oven and leave it for another 5 minutes approximately, until we see that the omelette is set on the surface. Be careful that with the heat of the Le Creuset skillet it continues cooking outside the oven, and we do not want it to dry out.
  9. Sprinkle with chopped parsley and serve immediately with a bowl of salad.

Las sartenes de hierro De Buyer pueden ir al horno durante 10 minutos a 200ºC, para dar un golpe de calor básicamente.
Dado que esta frittata la harás a un poco menos de temperatura y en unos diez minutos (15 a mucho tardar) deberías tenerla cuajada, sí debes poder hacerla en el horno sin problema. ¡Un saludo!

Conocía la influencia de la comida en el color de la yema de los huevos. De hecho me consta que mi amigo las alimenta con maiz (borona)por eso tiene ese color la yema, nada parecido al de los huevos que yo compro en el super.
Lo que desconocía es que el pienso incorpora colorante, así que te agradezco la aclaración.Un saludo.

Muchas gracias Lola. Yo he utilizado la sartén De Buyer en el horno, precisamente para preparar una tarta de cebolla. Cubrí el adorno con papel albal, por si acaso y no sufrió ningún daño. No se si por el papel de aluminio o porque resiste altas temperaturas. Pero me funcionó. Aunque igual Claudia es más precisa, yo solo te doy la referencia de mi experiencia.
