Ingredients

  • 2 kg large potatoes, Kennebec variety
  • 3 tablespoons of extra virgin olive oil
  • 2 teaspoons of sea salt
  • 50 g finely grated Parmesan cheese

Preparation

  1. Heat the oven to 180 °C.
  2. Wash and dry the potatoes, brush them with olive oil.
  3. Place them on a large roasting tray and add the salt on top.
  4. Bake for 1.5 hours (or until done), turning every 20 minutes.
  5. Remove the tray from the oven, cover the potatoes with the Parmesan cheese and bake for another 5 minutes, until crisp.
