Baked potatoes are always a wonderful resource to accompany any dish. Whether they are whole, cut into thick slices or baked, cubed or in wedges, with a simple dressing based on oil, salt and pepper or with the aromatic herbs you have on hand, they are the perfect complement to your table. Which is why I'm sure these Crispy Parmesan Baked Potatoes will fly as soon as you serve them.

As it is a recipe with just 4 ingredients in which the potato is the protagonist , be sure to choose the best variety, a potato that is softer when roasted, but does not fall apart , like the kennebec. Add an extra virgin olive oil and a good Parmesan and the result will be ten!

Here you have the recipe for baked potatoes with crispy parmesan , which is so simple that I don't know if it could be defined as such.

  • 2 kg large potatoes, Kennebec variety
  • 3 tablespoons of extra virgin olive oil
  • 2 teaspoons of sea salt
  • 50 g finely grated Parmesan cheese

  1. Heat the oven to 180 °C.
  2. Wash and dry the potatoes, brush them with olive oil.
  3. Place them on a large roasting tray and add the salt on top.
  4. Bake for 1.5 hours (or until done), turning every 20 minutes.
  5. Remove the tray from the oven, cover the potatoes with the Parmesan cheese and bake for another 5 minutes, until crisp.
  6. Serve immediately, and enjoy!

  • Season the potatoes to your liking. With freshly ground black pepper, with a few sprigs of thyme or rosemary, with oregano, with chopped garlic or onion... Make the recipe your own!
  • Nothing like the Microplane Zester for grating cheese. Watch out for his relentless blade! You will see how you grate a lot of Parmesan in no time and you get a lovely airy Parmesan.
  • When you add the Parmesan you can also add a bit of bacon or finely sliced ham, so that it browns at the same time as the cheese and gives it a different touch. You can also do it with chorizo or blood sausage. It sure comes out great.
