What is a crumble?

A crumble is a classic British dessert that combines cooked fruit on the base with a crunchy, crumbly layer on top . The top, called "crumble," is usually made with a mixture of flour, sugar and butter, creating a crumbly, golden texture when baked. This delicious combination of flavors and textures creates a comforting and versatile dessert that can be adapted to a variety of fruits. It is often enriched with the addition of dried fruits, providing an extra touch of crunch and flavor. Ingredients

  • 4 apples (600 g)
  • 75 g brown sugar
  • 1 teaspoon cinnamon
  • A splash of Amaretto liqueur
  • Juice of 1/2 lemon
  • 10 g cornstarch

For the crumble:

  • 250 g wheat flour
  • 40 g ground almonds
  • 200 g unsalted butter (it must be very cold)
  • 100 g white sugar
  • 1 Teaspoon vanilla extract
  • a pinch of salt

Elaboration

  1. Let's start by peeling and coring the apples, cutting them into quarters and dropping them into the BRA Infinity 24cm frying pan . Once we have them all, we add the sugar, cinnamon, cornstarch, the citrus touch of the lemon juice and a splash of the liqueur. We stir and allow this mixture of flavors to develop for 10 - 15 minutes, over medium heat.

  2. While the apples are cooking in the pan, we are going to prepare the crumble. In a bowl, add the flour and the other ingredients, except the butter (which should remain cold in the refrigerator until the last moment). We stir the ingredients and it is time to add the butter. We cut it into cubes and, with our fingertips, we pinch it, integrating the flour with the butter until we obtain an earthy texture. Once harmony is achieved, we pour this "magic earth" into the pan, over the apples when the 10 minutes we had mentioned of having them on the heat have passed.

  3. We heat the oven to 200 ºC in top-down mode and insert the frying pan (the Infinity has a removable handle so it can be placed directly in the oven*), and we let our crumble bake for 35 minutes.

  • We have used the Infinity frying pan, so we have done everything in a single utensil (from the heat to the oven and serve!), but if you do not have a frying pan for the oven, what you should do is transfer the apples, after time on the heat, to a 24 cm ceramic or non-stick mold, and then place the crumble on top and bake it in the mold.
