With these artichokes with ham that I bring you today, I share with you a traditional Spanish recipe prepared in a pressure cooker , so that what is delicious and beautiful is also fast and economical. This dish is a classic that never goes out of style . You can change your tastes or the way you cook it, but if you want to save time and preserve most of the nutrients and vitamins in artichokes , there is nothing like preparing it in a pressure cooker, such as the WMF Perfect Premium . Ingredients

  • 8 whole artichokes
  • 100 g Serrano ham in thin cubes
  • 2 cloves of garlic
  • 150 ml White wine
  • 100 ml Water
  • 4 sprigs of parsley
  • 4 thin slices of ham
  • 1/2 Lemon
  • Olive oil
  • Pepper (optional)

Preparation

  1. Prepare a bowl with 1 liter of cold water and lemon juice.
  2. Chop the garlic and parsley very finely.
  3. Peel the artichokes, removing all the green leaves from the outside, and cut off the tip.
  4. Cut the apple in half lengthwise and remove any fuzz from the core; soak the cleaned pieces in the lemon water to prevent them from darkening.
  5. Pour a splash of oil into the PERFECT PREMIUM pot over medium-high heat, add the cleaned and drained artichokes, stirring for a couple of minutes. Then add the diced ham and the chopped garlic and parsley.
  6. Sauté a little, stirring, then pour in the wine and water.
  7. When it starts to boil, cover and close the pot, without lowering the heat until the pressure indicator shows its second ring (in the PERFECT PREMIUM model, place the handle selector in position 2).
  8. When the pressure indicator shows its second ring, lower the heat to minimum and cook for 7 minutes.
  9. After 7 minutes, turn off the heat and let the pressure gauge on the WMF pressure cooker drop on its own until the cooking rings are no longer visible.
  10. Open the lid and serve immediately, placing a slice of ham on top of each plate as a garnish.

Grades:

To prevent the artichoke from oxidizing without using lemon, you can use a small sprig of parsley that you should squeeze into the bowl of water where you will submerge the artichoke pieces. This will prevent the mild acidic taste of the lemon.
