Tuna Tataki has become very popular and is a great recipe to make at home. Today I'm going to tell you how to make marinated tataki at home. More than just a recipe, tataki is a cooking technique or way of preparing fish and meat, very easy to learn and that you can apply to different fish and with your favorite sauces.

Let's look at some tricks for making tataki at home and some things that will be of interest to you in order to do it, and then I'll leave you with a recipe for tataki marinated with soy that I hope you like as much as I do.

What is tataki

The word tataki is a way of preparing meat or fish in Asian cuisine. It basically consists of marinating the food and cooking it, leaving it practically raw inside (unlike the sashimi technique, where the food is completely raw).

You can apply the tataki technique to tuna, bonito, salmon, as well as meats or vegetables (not chicken), and use different marinades as well as batters.

  • The most common way to prepare marinades is with soy sauce, which is mixed with ginger, orange or lemon juice, etc. But you could also marinate it with olive oil and spices.
  • The pieces are coated in seeds. The most common way to coat them is with soy, but you can use a mixture with flax or chia seeds, or coat them with chopped nuts, which will add a lot of flavour.

Things to keep in mind when making tataki

  • Choose the loin: To make a tataki, the best piece is always the loin, whether it is fish or meat.
  • Choose fresh produce, and remember that colour is important: it will lose intensity when cooked, but the more colour it has to start with, the more it will have when served. And we want a perfect presentation!
  • We are talking about cooking fish practically raw, so it is highly recommended to freeze it 48 hours before cooking it.
  • Cooking has to be very fast, in a very hot pan with little oil (we want to sear it, not fry it). Since you want the heat to be very high, do it in a cast iron pan (remember that intense heat in a non-stick pan is not advisable).
  • After marinating, remember to save the liquid to pour over the tataki if you want to serve it as is (you will dip the bread in it!). You can also use it as a sauce, as a dressing for a green salad, rice or pasta with which to serve the tataki.

Step by step to make tataki

As we have said before, tataki is a technique, not a recipe in itself, and you can apply it to salmon, vegetables, meats... So, in general and to use on your chosen foods, you can make tataki by following these steps:

  1. Freeze the fish for 48 hours, and let it defrost in the refrigerator before preparing it (do not use the microwave for this, you could cook it).
  2. Prepare the marinade and add the fish fillet or whatever you want to make into tataki. Let it marinate for two to four hours. Set the marinade aside.
  3. Coat the marinated pieces in sesame seeds, or in the mixture of seeds or nuts that you have prepared (sesame and chia, chopped hazelnuts...).
  4. Place a frying pan or iron griddle on the stove and heat it up to high heat. When it is very hot and there is hardly any oil left, sear the piece (applying it all the way, without cutting), passing over all the sides for just 15 seconds.
  5. Remove it from the pan and wait for the piece to lose heat.
  6. Slice the piece into pieces just one centimetre thick and slightly diagonally, using a very sharp knife.

Recipe for red tuna tataki with sesame

Ingredients

  • 400 g fresh bluefin tuna loin
  • 100 ml soy sauce
  • 50 ml of rice vinegar
  • 1 tbsp toasted sesame seeds
  • Ginger powder
  • Salt

Preparation

  1. Prepare the marinade: In a bowl, mix the rice vinegar with the soy sauce. Add a teaspoon of powdered ginger and a pinch of salt to the mixture. Mix.
  2. Using a knife, cut the tuna loin into two strips about 5 cm wide on the WMF wooden board and place them in the bowl, covering them with the marinade. Leave to rest for about 2 hours in the refrigerator (turn them occasionally).
  3. In a frying pan, toast the seeds for a few minutes if you bought them raw (this step is not necessary if you have already toasted them).
  4. After the marinating time has passed, pour the toasted sesame seeds onto a plate or board and spread them over the tuna loins, ensuring that the seeds stick well to the loin.
  5. Heat a skillet or iron grill over high heat, cook the two tuna loins on all sides for about 15 seconds.
  6. Remove from the pan and allow to cool.
  7. Slice the pieces as you would to serve sashimi (horizontally, in slices about one centimetre thick, using a sharp knife). Your tuna Tataki is ready!

Grades

You can accompany Tataki in many ways. Just pouring a few spoonfuls of the marinade on top, or I particularly love it accompanied by a colorful salad, which is phenomenal with the soy sauce and Tataki.
