There are breakfasts that seem like an indulgence but are actually among the healthiest things you can put on the table. These banana and oat pancakes no added sugar they are exactly that — a healthy, fluffy, and sweet recipe naturally thanks to the ripe banana. Without a pinch of sugar, without refined flours and ready in 3 minutes.

Ever since I discovered them, I loved the idea of using banana as a natural sweetener for the batter—that distinctive, sweet flavor that also pairs wonderfully with oats. At home they’ve become one of our favorite breakfasts, and it’s no surprise: they’re delicious, ready in no time, and You only need 4 ingredients that you probably already have at home.

Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 6 tablespoons of rolled oats (or oat flour)
  • 1 teaspoon of vanilla extract

Preparation

  1. Peel the bananas and put them in the KitchenAid chopper together with the eggs, the rolled oats, and the vanilla extract.

  2. Grind until you get a thick, smooth cream — it shouldn't be runny, but rather have enough body so the pancakes hold their shape.

  3. Heat the WMF mini frying pan to medium heat. When it's hot, add a little butter and wait for it to melt.

  4. Pour in a small amount of batter and let it set on one side — you'll see the edges start to cook and the surface begin to bubble slightly. That's the moment to flip it over.

  5. Cook for one more minute on the other side and remove. Repeat the process until all the batter is used up.

  6. If you want to give them a winning touch, place a small piece of chocolate on top while they’re still hot. It melts on its own and makes them irresistible. You can also drizzle melted dark chocolate over them or chocolate spread—paired with banana, they’re absolutely delicious! I’m leaving you more serving ideas below.

Suggestions to go with your pancakes:

These pancakes are already sweet on their own thanks to the banana, so they don’t need much else. But if you want to serve them with something, here are my favorite suggestions:

Sweet options:

  • Fresh fruit — blackberries, blueberries, strawberries, or mandarin orange segments
  • A drizzle of honey or agave syrup
  • Liquid chocolate — goes wonderfully with banana
  • A few squares of chocolate between one pancake and the next — they melt from the heat, and the result is spectacular
  • Peanut butter or jam

Salted options — for those looking for contrast:

  • Ibérico ham
  • Pan-fried bacon
  • Strong cheeses

The sweet-salty contrast with these pancakes is a combination that surprises and that, once you try it, you repeat.

Things you may be interested in:

  • I don’t add sugar to the pancake batter, since if you use two very ripe bananas, they already add enough sweetness, but if you prefer, you can add a little sugar.
  • We used the KitchenAid chopper, although I often use the  food processor Magimix to make use of its greater capacity.
