Ingredients

  • 1 aubergine (approx. 250 g)
  • 1 sweet potato (approx. 500 g)
  • 120 g quinoa
  • 180 ml vegetable stock (very hot)
  • 1 small red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 small piece of fresh ginger (about 1 cm), finely chopped
  • 5 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Tahini (one or two tablespoons)
  • Juice and zest of half a lemon
  • A few fresh mint and coriander leaves
  • Seeds from 1/2 a pomegranate
  • 1 spring onion, thinly sliced

Method

  1. Preheat the oven to 200 ºC.
  2. Place the quinoa in your Emile Henry "Papillote" ceramic baking dish and pour over the very hot vegetable stock.
  3. Place the chopped garlic, onion and ginger in a bowl with 3 tablespoons of extra virgin olive oil. Stir well to combine. Set aside.
  4. Cut the sweet potato into large cubes and set aside.
  5. Cut the aubergine in half and, using a sharp knife, score the flesh in a diamond pattern without cutting all the way through.
  6. Place the sweet potato pieces and aubergine on top of the quinoa and drizzle with the remaining oil.
  7. Add the onion, garlic and ginger mixture and season to taste.
  8. Cover the ceramic dish, place it in the oven and cook for 40 minutes.
  9. While it is cooking, mix the tahini, juice and zest of half a lemon, chopped mint and coriander leaves, seeds from half a pomegranate and sliced spring onion in a bowl. Set aside.
  10. Once the cooking time is up, remove from the oven and leave to rest, without removing the lid, for 15 minutes.
  11. Remove the lid and, just before serving, add the tahini mixture with the remaining ingredients. Enjoy!

Quinoa with eggplant and sweet potato en papillote

Ingredientes

  • 1 eggplant (approx. 250 g)

  • 1 sweet potato (approx. 500 g)

  • 120 g of quinoa

  • 180 ml of vegetable broth (very hot)

  • 1 small red onion, finely chopped

  • 2 cloves of garlic, finely chopped

  • 1 small piece of fresh ginger (about 1 cm), finely chopped

  • 5 tablespoons of extra virgin olive oil

  • Salt and pepper to taste

  • Tahini (one or two tablespoons)

  • The juice and zest of half a lemon

  • A few fresh mint and cilantro leaves

  • The seeds of 1/2 pomegranate

  • 1 scallion sliced into thin rounds

Preparación

  1. Calienta el horno a 200 ºC.

  2. Pon la quinoa en tu fuente cerámica "papillote" Emile Henry y vierte el caldo de verduras bien caliente.
  3. Pon en un bol el ajo, la cebolla y el jengibre picados junto con 3 cucharadas de aceite de oliva virgen extra. Remueve para que se mezcle todo bien. Reserva.

  4. Corta el boniato en dados grandes y reserva.

  5. Corta la berenjena por la mitad y, con un cuchillo afilado, haz unos cortes en la pulpa en forma de rombos, sin llegar a cortarla por completo.

  6. Coloca los trozos de boniato y la berenjena sobre la quinoa, y rocía con el resto del aceite.

  7. Añade la mezcla de cebolla, ajo y jengibre y sazona a tu gusto.

  8. Tapa la fuente cerámica, llévala al horno y deja que se cocine durante 40 minutos.

  9. Mientras se cocina, mezcla en un bol el tahini, el zumo y la ralladura de medio limón, las hojas de menta y cilantro picadas, los granos de media granada y la cebolleta en rodajas. Reserva. 

  10. Transcurrido el tiempo, retira del horno y deja que repose sin destapar durante 15 minutos.

  11. Destapa y, justo antes de servir, añade la mezcla del tahini con el resto de ingredientes. ¡Buen provecho!
