This past weekend I tried the tofu burgers . At home we love burgers; In fact, I have been innovating and preparing them for quite some time now, not only with chicken or meat, but also with various ingredients that I manage to surprise.

It wasn't long ago when I discovered veggie burgers , which are suitable for vegans; They can be made with legumes, like lentils and chickpeas, but I've always wanted to try tofu.

Now it is easy to find it in any supermarket so we have it close at hand. It is true that in this case the Gefu hamburger press has been of great help, since the mixture needs to be very compact in order to have good results. Do you want to try them?

Ingredients

  • 300 grams of tofu
  • 75 g of cooked chickpeas
  • 1 onion
  • 1 carrot
  • 1 clove garlic
  • 2 tablespoons of soy
  • 1 tablespoon grated ginger, best fresh
  • 1 teaspoon cumin
  • Bread crumbs
  • Olive oil

Preparation

  1. First of all we must drain the tofu well. To do this, we place it on the WMF Gourmet stainless steel drainer for about an hour. We let it release the water and we help in the process by pressing it, from time to time, firmly with a flat stainless steel spatula .
  2. Chop the onion and carrot very finely, salt slightly and cook for half an hour in a frying pan.
  3. Meanwhile, we crush the chickpeas with the garlic and the soy sauce.
  4. Finally, we mix the poached vegetables with the chickpea puree and add the crushed tofu (by machine or crushed with a fork).
  5. With the help of the Gefu hamburger presser we are forming the hamburgers.
  6. Pass them through breadcrumbs and fry them in oil at a medium-high temperature with the B De Buyer mineral cast iron pan (I have used the version with the French stainless steel handle ) so that they are sealed, taking special care when giving them the turn.
  7. We will use a shovel to take them from one place to another, the mixture is delicate and can break quite easily.

Tip: It is important that the dough is dry and drained, not only the tofu but also the onion and the poached carrot should not add water to the mixture.
