Nothing like waking up to the smell of freshly made waffles. Making waffles is like making pancakes, you never make enough of them and if they are of a different flavor, then it is one of the best ways to start the day, although I will tell you that at home they are the same in the morning as in the afternoon.

These today are made with peanut butter . Preparing the cream is the first thing to do. It takes 5 minutes and it's much richer than the peanut butter you buy, and like everything you make at home, it has the charm of being made with love.

KitchenAid Stand Mixer and Nordic Ware Waffle Maker

Ingredients

For the peanut butter:

  • 200 g of raw peanuts – experience has taught me that fried ones are not worth it, nor do I really like roasted ones. It is best to buy them with a hard shell and peel them at home.
  • A pinch of salt
  • 1 to 2 tablespoons vegetable oil
  • Half a tablespoon of pure vanilla extract
  • 1 or 2 tablespoons of maple syrup

For the waffles (9 units):

  • 240 grams of milk
  • 70g sunflower oil
  • 65 g peanut butter
  • 2 tablespoons of brown sugar
  • ½ teaspoon pure vanilla extract
  • 125g flour
  • 2 teaspoons baking powder
  • 1 egg
  • ¼ teaspoon salt

Preparation

For the peanut butter

  1. Peel the peanuts, also removing the red skin they have (for this, once the shell is removed you can put them in a closed pot and make them dance up and down, and that fine red skin jumps easily). Put them on a baking tray and toast them at 160 degrees for about 5 minutes. Let them cool.
  2. Pass the peanuts to a grinder (either electric or manual ) and grind them for 1 minute. If we want to find bits of peanuts in our butter, it's time to scoop out 1 tablespoon of crushed peanuts.
  3. Scrape down the sides of the bowl and the bottom and blend again for another minute. Stop again to repeat the process of scraping down the sides and bottom of the bowl. Blend for another minute.
  4. Add salt, oil and maple syrup with vanilla. Blend until the mixture becomes completely smooth. At this point it should already be a spreadable cream. How smooth the butter is and the time you need will depend on the power of the motor of our food processor. Transfer the peanut butter to a jar.

To make the waffle batter

  1. In a large bowl, mix the milk, 55g sunflower oil, peanut butter, brown sugar and vanilla.
  2. In a medium bowl, sift together the flour, baking powder, egg, and salt. Add the flour mixture to the milk mixture, beating with the KitchenAid mixer until smooth.
  3. Heat the Nordic Ware waffle iron . I grease it with release spray because I find it very comfortable, but you can also do it with a little oil and a brush.
  4. Place the dough in the waffle iron and cook for two minutes on one side. After this time, turn it over and let it cook for two more minutes. Depending on the type of heat we use (gas, glass ceramic or induction), we will need a minute or so.
  5. Repeat with the remaining batter, lightly greasing the waffle iron as you make each batch of waffles.
  6. Serve with whipped cream or ice cream and of course with a little of our peanut butter and a little chocolate syrup.
