There's nothing like waking up to the smell of freshly made waffles. Making waffles is like making pancakes, you can never make enough and if they also have a different flavour then it is one of the best ways to start the day, although I will tell you that at home they are enjoyed both in the morning and in the afternoon.

Today's are made with peanut butter . Preparing the butter is the first thing we need to do. It takes 5 minutes and is much tastier than the peanut butter you buy ready-made and, like everything made at home, it has the charm of something made with love.

KitchenAid Stand Mixer and Nordic Ware Waffle Maker

Ingredients

For the peanut butter:

  • 200 g raw peanuts – experience has taught me that fried ones are not good, and I don’t really like roasted ones either. It is best to buy them with hard shells and peel them at home.
  • A pinch of salt
  • 1 to 2 tablespoons vegetable oil
  • Half tablespoon of pure vanilla extract
  • 1 or 2 tablespoons of maple syrup

For the waffles (9 pieces):

  • 240 grams of milk
  • 70 g sunflower oil
  • 65 g peanut butter
  • 2 tablespoons brown sugar
  • ½ teaspoon pure vanilla extract
  • 125 g of flour
  • 2 teaspoons baking powder
  • 1 egg
  • ¼ teaspoon salt

Preparation

For the peanut butter

  1. Peel the peanuts, removing the red skin (to do this, once you have removed the shell, you can put them in a sealed jar and make them bounce up and down, and the thin red skin will pop off easily). Put them on a baking tray and roast them at 160 degrees for about 5 minutes. Leave them to cool.
  2. Transfer the peanuts to a food processor (either electric or manual ) and grind them for 1 minute. If you want to find bits of peanuts in your butter, this is the time to remove 1 tablespoon of crushed peanuts.
  3. Scrape down the sides and bottom of the bowl and blend for another minute. Stop again to repeat the process of scraping down the sides and bottom of the bowl. Blend for another minute.
  4. Add the salt, oil and maple syrup with vanilla. Blend until the mixture becomes completely smooth. At this point it should be a spreadable cream. How smooth the butter becomes and how long it takes will depend on the power of the motor in your food processor. Transfer the peanut butter to a jar.

To make the waffle batter

  1. In a large bowl, mix the milk, 55 g sunflower oil, peanut butter, brown sugar and vanilla.
  2. In a medium bowl, sift together the flour, baking powder, egg, and salt. Add the flour mixture to the milk mixture, beating with the KitchenAid mixer until a uniform batter forms.
  3. Heat the Nordic Ware waffle maker . I grease it with release spray because I find it very convenient, but you can also do it with a little oil and a brush.
  4. Place the dough in the waffle iron and cook for two minutes on one side. After this time, turn it over and cook for two more minutes. Depending on the type of heat used (gas, ceramic or induction), you will need one minute more or less.
  5. Repeat with remaining batter, lightly greasing waffle iron as you make each batch.
  6. Serve with whipped cream or ice cream and of course with a little of our peanut butter and a drizzle of chocolate syrup.
