If you feel like preparing an original dessert, you cannot stop preparing this recipe brought to us by Virginia, author of Sweet&Sour . It is a recipe for cheese and caramel flan, a delicious proposal and very easy to prepare at home. Virginia suggests making it with ricotta cheese, but you can make the same recipe with another type of fresh cheese or mató (you just have to replace it with the same amount of ricotta). Results are excellent with either option. A real vice!

This cheese and caramel flan is one of those traditional desserts that never disappoints, a classic, an "old fashioned" as the Anglo-Saxons would say. But if you also give it a different touch, with the addition of ricotta, you have a special, delicious dessert, and not only easy, but it is also one of those desserts that does not give you headaches, because you have them prepared in advance and You just have to unmold when serving.

The one that I bring you today is totally addictive, creamy and with a cheesecake flavor that drives you crazy . The secret, add a part of ricotta or other fresh cheese or killed . For those of you who are lactose intolerant, all you have to do is replace the milk with lactose-free milk or another type of vegetable milk, and of course buy a cheese, or prepare the cheese also with lactose-free milk.

Let's go with the recipe, which only requires 4 ingredients, which you surely have on hand in your kitchen:

Ingredients (for 6 people)

  • 5 "L" eggs
  • 150g of common sugar
  • 500 ml of whole milk (option lactose-free milk)
  • 250gr of ricotta or other fresh cheese or mató

For the caramel:

  • 50g of sugar
  • 2 tablespoons of water

Preparation

  1. Preheat the oven to 170ºC heat up and down and cover with 2 fingers of water a dish that can go in the oven, and in which your flanera fits, to cook the pudding in a bain-marie. I have used the Emile Henry ceramic oven tray and the Kitchen Craft custard tray , which in addition to being non-stick, already has a lid.
  2. Prepare the caramel. Put the sugar with the water in a small saucepan and take it to the fire. Let it blend and brown, it won't take you more than 2 minutes, so don't move from its side. When it starts to be blond, remove it from the heat, because with the residual heat it will take on a dark golden color. Cover the bottom of the flanera with this caramel. Note that the caramel burn is one of the worst. Distribute the caramel well on the bottom and sides, turning the flanera.
  3. In a medium bowl, mix the beaten eggs as for an omelette, the sugar, the crumbled cheese (see photo) and the milk. Beat them with the hand mixer , until the mixture is homogeneous.
  4. Pour this mixture into the pudding dish and close it with the lid so that no water or moisture enters the preparation. This flanera is ideal because, as I told you, it has a lid.
  5. Cook the pudding in the bath for 55 minutes. Once cooked, take out the flanera and, without opening the lid, let it cool to room temperature. Do not be afraid that it has not been cooked, with that time it will be done and the residual heat would finish cooking it.
  6. Take all night to the fridge so that it takes consistency (in the same mold).
  7. At the time of serving, give a small blow, so that the caramel detaches and overturns on the source in which you are going to present it.

Lamento que en tu flanera no bastansen los mismos tiempos!!! Siempre comprobamos las recetas y, ciertamente, la recomendación de Virginia es en la flanera y cantidades que ves en la receta, y en otra puede variar el tiempo. Lo lamento!! Espero que con más tiempo o pequeñas adaptaciones puedas conseguir un buen flan- Saludos

No se si los tiempos son para la flanera especial que se recomienda. Yo lo hice en una flanera metálica normal con tapa y con 55 minutos a 170 grados arriba y abajo no basta. Lo dejé cerrado hasta el día siguiente como recomiendas y al volcarlo lo que encontré fueron unas natillas de queso fresco. Le hubiera hecho falta por lo menos media hora más de horno. Menos mal que mis invitados eran de confianza y dijeron que de sabor estaban muy buenas.
(He vuelto a utilizar el horno después y funciona bien).

Buenos días Helga: No sabes cómo entiendo a tus hijos, a mí antes tampoco me gustaba el caramelo. De hecho el caramelo si está muy oscuro tiende a amargar, yo creo que por eso no me gustaba. Por eso yo lo dejo rubio.

Pero te dejo tranquila, el caramelo no es el que evita que el flan se pegue., sino el antiadherente de esta flanera y la propia textura del flan.

Mi truco cuando no me gustaba el caramelo era sencillamente no usarlo. Queda algo menos vistoso, pero si no te gusta el caramelo queda muy rico y perfecto. Un saludo

Hola Olí. Vaya por Dios ?. Yo no sustituiría la ricotta por mascarpone. El mascarpone es más cremoso y tiene menos textura y sabor. Mejor por queso de Burgos, y si quieres utilizar un queso cremoso, el tradicional tipo Philadelphia mejor. Tiene más sabor. De todas formas te animo a preparar requesón o ricotta en casa, es facilísimo. Buen fin de semana

Si vas a preparar flanes individuales, el tiempo de horneado dependerá un poco del tipo de flanera que utilices (porcelana, aluminio, desechable..) porque tienen distinto grosor.

Pero para que te hagas una idea, al ser más pequeños debes subir un poco la temperatura del horno, a unos 180ºC y te llevará unos 30-35 minutos.
