I invite you to prepare cottage cheese at home! It is very easy and the result is spectacular. You'll see, let yourself be guided by Loreto (from Sabores de Colores ): with only 3 ingredients that you surely have at home, you'll get a delicious homemade cottage cheese.

About 5 years ago I was lucky enough to learn how to make different preparations from milk and rennet. You cannot imagine what a world opened up before me! Immediate curds, fresh burgos-type cheeses, cottage cheese presented in various ways and even with the possibility of flavoring them as our imagination allows us.

I understand that many times jumping into the pool and considering making recipes at home is complicated, or we are simply infinitely lazy. But I already tell you that today I encourage you to prepare, without rennet, a fantastic homemade cottage cheese , very simple and with delicious results. We will achieve it using simply lemon juice, and you will see that the result is a soft, soft and grainy cheese.

Explained quickly and easily, homemade cottage cheese has no more science than milk coagulates with the help of acid or with rennet from the animal's stomach or from the artichoke flower -it is bought in pharmacies-; once coagulated, it is passed through a fine mesh to remove the excess whey.

Remember that this leftover whey, yellow in color, is fantastic for making biscuits -as if it were buttermilk-, sourdoughs, dressings and even shakes to start the day with energy.

Ingredients (for 6 people)

350g of cottage cheese approximately:

  • 2L of whole fresh pasteurized cow's or goat's milk
  • Strained juice of 2 lemons
  • 2 teaspoons of salt

Elaboration

  1. We heat the 2 liters of milk in our Le Creuset cocotte . When it starts to boil add the lemon juice and stir carefully with a spoon . Add the salt and let it rest for an hour or until the preparation is tempered.
  2. In a large bowl we have a large strainer and on it our Gefu cotton mesh . Carefully pour in the coagulated milk with the lemon and let it drain.
  3. Once all the liquid has passed through the mesh, we will see that the cheese has remained in it. In order for it to drain well, I recommend making a bundle joining the four ends of the mesh and pressing with your hands just above the cheese. In this way and with this pressure we will be able to extract the excess whey, although we must not overdo it either, we do not want a dry cottage cheese.
  4. If you want you can also leave it filtering overnight in the fridge (by simple gravity) and after 8 hours you would have the cottage cheese ready.
  5. Once the filtering process is finished, the ideal thing is to shred it with a fork and store it in clean closed jars in the fridge ( Luigi Bormioli's are great for this, since they close hermetically but due to their lid system you can serve it directly on the table) and not for more than 5 days.

As you can see, preparing cottage cheese at home is very, very simple, ideal for combining in many ways, either as a dessert with nuts and honey, as a sweet or savory cake filling, as a base for a dip or even to use in filled with fresh pasta, lasagna or cannelloni. Hummm que rico el requesón. Yo el suero lo aprovechó en el bizcocho, en la masa de la pizza y para combatir los hongos de las plantas los rocío con esto (200ml suero, 800ml agua y media cucharadita de bicarbonato). Así no tiramos nada.

Hola Julia, francamente te diré que creo que sí que puedes prescindir de la sal, lo que es imprescindible para cortar la leche es el limón, pero en casa siempre se ha hecho el requesón con sal, pero no creo que tenga más función que salarlo un poco. Así que te diría que puedes probarlo sin problema porque requesón debería salirte igualmente :), y ver qué tal de sabor así . Un saludo!

Loreto lo menciona en la intro, ese líquido puedes usarlo como si fuera buttermilik para hcaer bizcochos, por ejemplo. Ya ves que aquí no se tira nada! :) Un saludo!

Hola Ester, no puedo confirmarte al 100%, yo siempre lo hago con una pizca de sal, pero entiendo que sí. Lo que buscas es coagular la leche, y eso lo consigues con el vinagre o limón. De no poner sal, saldrá tal vez demasiado dulce, pero si es lo que gusta en casa tendréis que probar ;) Un saludo!
