Ingredients

  • 1 Camembert cheese (you can use brie or another creamy cheese, such as coulommiers)
  • 3 or 4 apricots
  • 2 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1 tbsp sunflower seeds
  • 1 or 2 sprigs fresh rosemary
  • Salt and pepper
  • Slices of toasted bread or crackers for serving

Preparation

  1. Preheat the oven to 180 °C.
  2. Place the camembert cheese in the Cheese Baker and make a few cross-shaped cuts in the top rind. Once the cuts are made, use the tip of a knife to slightly lift the little squares of rind.
  3. Wash, dry, and chop the apricots; arrange them around the cheese and place some on top.
  4. Sprinkle with the sunflower seeds.
  5. Next, drizzle the honey over the top and add a splash of olive oil.
  6. Place the rosemary sprigs on the apricots. Also place one on top of the cheese for decoration.
  7. Finally, add the salt and pepper and close the 'Cheese Baker'.
  8. Bake for about 15-20 minutes.
  9. Serve with toasted bread, toasted seeded bread, or crackers.

NOTES:

  • As indicated, you can make this recipe with any cheese similar to camembert.
  • Likewise, you can replace the apricots with peaches or nectarines.
  • Choose the honey you like best, but try to make sure it doesn't have a very strong flavor. A mild honey such as wildflower honey, rosemary honey or lemon honey gives just the right amount of flavor and aroma without overpowering the final result.
