Banana and chocolate cupcakes
I am sure that you are going to love these banana biscuits . In the recipe you are given the option of making them with banana and chocolate, and I would definitely recommend it -the touch of the crumbled chocolate chips inside combines tremendously well with the banana, while giving it a rush of flavor and of vice (and in the end, what are we looking for when we make confectionery?
As these cakelets contain banana , it makes them very juicy. It is a recipe that does not take you any time to prepare and the result is worth it.
They are ideal to serve for breakfast or for a snack in individual format. They are made with the Nordic ware brilliance bundtlette molds , which gives them this beautiful elegant shape.
You will see that among the ingredients is the Nomu vanilla extract . I find it sensational. It gives an authentic vanilla flavor to my preparations and it is very practical to have a bottle in the pantry. You have to be prepared to prepare a delicious dessert at any time!
Treat yourself to these Banana Biscuits. I'm sure you'll love them. You also have the option of making them in a banana pound cake or bundt format , simply pour the batter into a large tray or bundt pan instead of an individual bundt pan.
Ingredients
- 1 1/4 cups of flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup yogurt
- 1 cup very ripe mashed banana*
- 1/4 cup butter, melted
- 1/3 cup sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 tablespoon Nomu vanilla extract
- Optional: chocolate chips (to make banana and chocolate cupcakes)
To understand the quantities, just take a glass or cup of 250ml capacity in water. Fill that same glass to measure all the ingredients.
- A glass or cup of 250ml of water will be equivalent to a glass or cup of 125g of flour.
*To make the mashed banana, simply mash them with a fork.
Gold Brilliance Bundtlette Nordic Ware Pan
Preparation
- Preheat the oven to 180°C. Prepare the Nordic ware brilliance bundtlette pan with a flour-containing release spray , and evenly coat the details of the pan with a pastry brush.
- In a bowl , mix the flour, baking soda, cinnamon, and salt.
- In another bowl, mix the yogurt and mashed banana. Booking
- With the help of a hand or electric mixer with rods, beat the butter and the two sugars. Add the egg and vanilla and mix well. Add half of the flour mixture, then half of the banana mixture. Combine completely before adding the other half of the flour-banana mixture. Scrape down the sides of the bowl and mix until fully incorporated.
- If you want to make the banana and chocolate biscuits, now is the time to add the chocolate chips (a good handful or two, to your liking). Mix well so that they are well distributed throughout the dough.
- Pour evenly into prepared pan, filling each cavity only ¾ full. Tap the pan on the counter a few times to remove any air bubbles.
- Bake for 15-20 minutes or until inserted toothpick comes out clean. Remove from the oven, wait 8 to 10 minutes before unmolding, inverting the pan onto a cooling rack.
- Wait for them to cool down and enjoy! You can sprinkle a little brown sugar and icing sugar on top to decorate with the help of a hand strainer.

- To make the mashed banana, simply mash them with a fork: squeeze the bananas to break them up, nothing more than this. As they have to be ripe bananas, you will see that it is very easy for you. You can also do it with the help of a food processor or a food processor, but you don't have to make a mess in this case... Put the bananas in the bowl and simply squeeze them.
- Banana and chocolate marry very well, I recommend you add a good handful so that they melt inside the cupcakes, and each bite is an even more delicious vice.
- IMPORTANT! Por favor, ¿podríais publicar las cantidades en gramos? Es más cómodo para los sólidos y más preciso. Por cierto, el puré de plátano se puede hacer en el bol de la KA (con la pala).
