Clams in sauce is a very Mediterranean dish; there are many ways to cook them and different sauces to accompany them. Clams a la marinera, clams in green sauce, clams with wine, some stews with them…. All delicious!!!
These mollusks, known as bivalves, live under the sand and feed by filtering small amounts of water during the tides. For this reason, we can often find that unpleasant sensation of chewing sand when eating them. To avoid it, it is recommended that you keep the clams in a bowl with water and salt one hour before cooking so they expel any sand inside. You can also add a splash of vinegar to the water instead of salt. These tricks will help you do a homemade filtration of our mollusks.
The recipe I bring you today is simple and very affordable. Perfect for any occasion, whether as an appetizer, a starter, or for a romantic dinner. Ingredients
1kg of clams
1 onion
2 garlic cloves
Cherry tomatoes
Fresh parsley
Salt
Extra virgin olive oil
150ml of white wine
Recipe preparation
1. Put the clams in salted water one hour before cooking. After this time, rinse them very well under the tap and set aside.
2. Finely chop the onion and garlic.
3. Put the olive oil in the pan, covering the base, and heat over medium-low heat.
4. Once the oil is hot, sweat the onion and garlic until golden without burning them.
5. Add the cherry tomatoes that you have previously halved. With the help of a wooden spatula or a silicone spatula, crush some of them so they release their juice. If you like you can add a tablespoon of homemade fried tomato sauce at this step. Stir for a few minutes.
6. Add the wine and let the alcohol evaporate.
7. Add the clams, the salt, the chopped parsley and mix everything, wait for the clams to open and the sauce to reduce a bit (if any clam remains closed, remove it). To facilitate the process, you can cover the pan with a lid.
