We already told you how easy it is to make waffles at home. We leave you a post about it with a basic recipe here.
Today we suggest another easy waffle recipe, but this time made with cornmeal (which you can replace with gluten-free flour to make gluten-free waffles). We suggest pairing it with a blueberry jam that adds contrast and flavor. Delicious waffles for breakfast!
To make them, nothing better than the Nordic Ware waffle iron, suitable for vitroceramic and gas, which distributes heat evenly and produces perfect waffles. Will you give it a try?
Ingredients
For the waffles:
- 3/4 cup finely ground cornmeal

1 cup all-purpose flour (you can replace it with gluten-free flour if you prefer)

1 tablespoon maple syrup

2 teaspoons baking powder (yeast)

1 teaspoon baking soda

1 teaspoon salt

1 egg at room temperature

1 cup buttermilk at room temperature

5 tablespoons melted butter
- 225 gr blueberries, frozen or fresh
- ¾ cup beer (a citrus IPA or bitter beer is best)
- ½ cup sugar, less if the berries are sweet
Preparation
Let's prepare the waffles:
- Mix the cornmeal, flour, maple syrup, baking powder, baking soda, and salt.
- In another bowl, beat the eggs together with the buttermilk and the butter, and when well combined add the dry ingredients mixed earlier. Don't overmix; small lumps should be visible.
- Let the batter rest for 15 minutes. During the last 3 minutes of this resting period, preheat both plates of your Nordic Ware waffle iron over medium heat.
- Brush the waffle iron with butter, vegetable oil, or non-stick spray. Pour the batter into the center of the iron and cook for 3–4 minutes total, turning the waffle iron halfway through the cooking time so both sides of the waffles brown evenly.
- Repeat the process with the remaining batter.
Let's prepare the compote:
- Mix all the ingredients in a small Shallow Casserole or a saucepan and bring the mixture to a boil.
- Start over medium heat but when you see it beginning to heat up reduce to low and cook for 20 minutes or until the liquid is reduced by half and thickens (bear in mind it will thicken more as it cools).
- Serve a spoonful of the compote hot or at room temperature over the fresh cornmeal waffles. You'll love it!

Acabo de hacer la masa de los gofres y la consistencia no parece que sea la apropiada, no es nada liquida, mas bien compacta, como si fuera pan. He revisado las cantidades y solo se me ocurre que la cantidad de suero o huevos (solo uno), no sean suficientes. A alguien le ha pasado?
