How delicious! Potato and carrot rosti, a dish that you will make in no time and that you will undoubtedly enjoy at any lunch or dinner. Do you dare to prepare this recipe from Lola, author of Loleta ?

Today I bring you one of my favourite dishes when I travel to Switzerland or Germany, rosti. It is a very popular potato dish , which was traditionally served for breakfast but today has become a fantastic accompaniment to meat and vegetable dishes. I also love to eat it as a main dish, accompanied by some salad or eggs.

Although rosti is almost always prepared with potatoes, I have preferred to use carrots as well, because that is what I like best. And I have accompanied it with an egg to complete the dish.

You can make them large, the size of a frying pan, but I love making them small, in a more individual format. I make them in the Le Creuset cast iron frying pan , because the cast iron reaches a perfect temperature to achieve the crispy touch , and I also use it to take it directly to the table because it is very pretty!

Ingredients

  • 2 potatoes
  • 3 carrots
  • 2 tablespoons all-purpose flour
  • Salt
  • Freshly ground black pepper
  • Olive oil or butter
  • ½ spring onion
  • 3 eggs (optional)

Preparation

  1. In an Efficient Bra saucepan, boil water (up to half its capacity). When the water is boiling, add the potatoes and carrots and cook for only 5 minutes. After this time, remove and allow to cool in plenty of cold water.
  2. Peel the potatoes and carrots. Using the Kitchen Aid food processor , cut the carrots and potatoes into julienne strips. Place them on a plate and add the flour and season with salt and pepper.
  3. Add the finely chopped spring onion and mix well.
  4. Form patties about 8 cm in diameter.
  5. Heat the oil or butter in our Le Creuset cast iron skillet and wait until it is hot. Add our pancakes (one or two at a time) and cook for 3 minutes on one side before turning them over (they should be golden and crispy).
  6. Prepare some fried eggs in a frying pan (they are great in De Buyer cast iron ones , especially if you like them with lace!). This step is optional.
  7. Serve with a little quark cheese sprinkled with parsley, smoked salmon or fried eggs… or a bit of everything!

Receta tuneada. Como no he conseguido hacer las tortitas he añadido toda la masa junta a la sartén. Me ha salido como si fuera una tortilla de patata. ¡muy contenta con la receta! :-)

Muchas gracias por la receta. Una pregunta: los tres huevos que aparecen en los ingredientes son para feirlos de acompañamiento o hay que incorporarlos en la mezcla de zanahorias, patatas,…en algún momento? No ví ese detalle en el apartado de elaboración.
