It's the season for soups and creams that comfort our body and spirit. That's why we bring you this succulent red lentil cream with a reasonably oriental spice and ingredients.

The base of this soup is red lentils, a variety of lentil widely used in India and Indochina. Orange in colour when raw, they lose most of their colour when cooked. They come without the skin and are split in half, so they cook quickly and do not require soaking.

This soup also contains coconut milk, which makes it a bit more filling than it might seem. We round out the flavours with cumin and cinnamon, an unbeatable combination. I used my Magimix Cook Expert robot because it has a fantastic option, the Creamy Soup, in which you just have to add the chopped vegetables with the liquids and seasonings, and the machine cooks everything and blends it for you at the end.

In any case, we will show you the standard method, without a robot, to prepare the cream, which is not at all difficult. Here we go.

Revol and Magimix Cook Expert porcelain plates

Ingredients

  • 250 g cauliflower
  • 150 g red lentils
  • 2 medium carrots
  • 2 cloves of garlic
  • 1 tbsp. ground cumin
  • 1 tsp turmeric
  • 1 pinch of ground cinnamon
  • 1 good sprinkle of ground white pepper
  • 500 ml of vegetable broth or water
  • 400 ml coconut milk
  • Salt to taste

Preparation

  1. Peel the carrots and cut them into slices. Do the same with the garlic cloves. Set aside.
  2. We wash the cauliflower and cut it into pieces, including the stems.
  3. We weigh the lentils and measure the seasonings and liquids.

Cooking without a robot

  1. Place all the ingredients in a saucepan and bring to the boil. Cook for at least 30 minutes, until the vegetables are tender.
  2. We grind as we wish and season with salt.

Cooking with Magimix Cook Expert

  1. We put all the vegetables in the steel pot, together with the seasonings and liquids. We make sure that they are almost covered with liquid so that they cook well.
  2. We select the Cooking > Creamy Soup program and set the time for 40 minutes.
  3. When the program is finished, add salt to taste. The cream will be thick, if you want it thinner, add water to taste.
  4. We serve the soup, already blended. I added some kale chips (for millennials).
