If you agree with me that baked potatoes are much more than a top side dish, I'm sure this recipe for air fryer cheesy roasted potatoes will excite you as much as it does me. They taste just as good as oven-baked, but we’ll take less time to make them. That means lower energy consumption, and it’s always nice to find ways to reduce the electricity bill.

You can make them in the oven if you prefer or if you haven't yet decided to bring an air fryer into your life. This appliance, which I think has revolutionized many kitchens, is a great and very versatile option for cooking healthily and deliciously, making less mess and taking less time.

The possibilities are as many as the ideas you have, because it's not just a tool for frying without oil and "without guilt". It's also a small air oven with which you can prepare countless recipes, even desserts! Although it doesn't have the same capacity as a home oven, you can also make cookies, cupcakes or a delicious cheesecake.

We'll make the recipe for these cheesy roasted potatoes in the new vertical 6-in-1 air fryer. Besides being compact and taking up very little space thanks to its vertical design, it offers a large capacity in its two drawers.

Ingredients

  • 4 large baking potatoes (about 250–300 g each, approximately)
  • 1 onion finely chopped, in small dice
  • 200 g smoked bacon, cut into thin strips or small dice
  • 100 g grated cheddar cheese
  • 100 g sliced cheddar cheese
  • 2 tablespoons of crème fraîche or sour cream (whichever you prefer or have in the fridge)
  • Salt and freshly ground black pepper, to taste
  • Chopped parsley for garnish

Preparation

Note: We use a dual-compartment air fryer, so we do the whole process in parallel. If you don't have one with those features, simply follow the steps to roast the potatoes first, then follow the steps to roast the onion and bacon (or fry them in a pan), and once everything is roasted continue from step 7.

  1. Wash the potatoes with water and dry them. Place the vegetable tray in the drawer of zone 1 of your Ninja vertical 6-in-1 air fryer. Put the potatoes in the basket.
  2. Put the chopped onion and bacon in the basket of zone 2 of your air fryer, stir to combine and place the basket in the fryer. Select the temperature and cooking mode for the potatoes. Select zone 1, turn the knob to choose the ROAST function, set the cooking temperature to 200º C and the time to 45 minutes.
  3. Now program the cooking for the onion and bacon, which are in zone 2. Turn the dial and select the AIR FRY function. Set the temperature to 200º C and the time to 20 minutes. Start the cooking by pressing the dial.
  4. After about 15 minutes, stir the onion and bacon a little so they finish cooking.
  5. Five minutes later, when the potatoes have been cooking for 20 minutes, turn them over so they roast evenly.
  6. When the potatoes reach 99º C (pierce to the center with a kitchen thermometer), turn off the fryer, remove them from the basket and let them cool a little. Also remove the basket from zone 2 and set aside.
  7. When they have cooled, cut them in half and scoop out the flesh with a spoon without breaking the skin.
  8. Put the potato flesh in a bowl and with a potato mashermash it well together with the onion and bacon you cooked, the crème fraîche (or sour cream) and the grated cheddar. Add salt and pepper to taste.
  9. Fill the potato skins with this mixture and place a slice of cheddar on each stuffed potato half.
  10. Place the vegetable racks in the fryer baskets and distribute the potatoes between the two baskets. Turn the dial to select the AIR FRYER function and set to 200º C for 8 minutes. Select the additional combine function (MATCH) and press the dial to finish roasting the potatoes and melt the cheese so it integrates into the filling.
  11. As soon as they're ready, remove the baskets and serve the potatoes carefully, sprinkling a little chopped parsley over them. Serve with a good salad. Enjoy!

  • Although the recipe steps are indicated for the Ninja vertical 6-in-1 air fryer, you will be able to make it in any air fryer or even in your home oven. You may need to adapt times and temperatures, but you can use the ones you select when making roasted potatoes as a reference.
  • Another option is to boil the potatoes and, once cooked and warm, scoop them out and fill them the same way. Afterwards it's worth finishing them in the oven or air fryer.
