Healthy, fun, tasty and very easy to make. These zucchini and feta cheese fritters have everything to help you impress your guests or to treat yourself. They can be served as a starter or as a side dish, although nothing prevents them from being the star of the appetizer moment.
They are made with very familiar ingredients and carry the Mediterranean mark on both sides. To make them perfect it's important to drain the zucchini well, which as you know releases a lot of water, so that when you add the rest of the ingredients you get a compact, manageable batter.

Ingredients (for 4 servings)
- 2 zucchinis
- 1 spring onion
- 2 eggs
- 180 g feta cheese
- Zest of 1 lemon
- 2 sprigs fresh mint
- 1 sprig fresh dill
- 2 sprigs fresh basil
- 1/2 tsp ground cumin
- 1/2 tsp hot smoked paprika flakes
- Salt
- Ground black pepper
- 60-80 g wheat flour
- 50 ml extra virgin olive oil

Preparation
- We wash the zucchinis well, remove and discard the ends. We grate the rest or, as I did, grate them with the Magimix food processor.
- We remove and discard the outer layer of the spring onion and also the tips of the greens. We cut the rest in half and grate it.
- We mix the zucchinis with the spring onion and place them inside a cloth or cheesecloth. We hold by the ends and twist, pressing so the zucchini and onion release their water. We squeeze out as much as possible.
- We beat the eggs in a large, deep bowl. We add the feta cheese and crumble it.
- Next we add the lemon zest, the herbs, all finely chopped, and the spices.
- We incorporate the drained zucchini-onion mixture and mix well.
- We finish the batter by adding the wheat flour and stirring until we obtain a homogeneous mixture.
- We heat a tablespoon of extra virgin olive oil in our cast iron pan and drop spoonfuls of the mixture, pressing gently to shape them into patties.
- We fry the fritters over medium heat for five minutes on each side or until they acquire a nice golden color.
- We serve them freshly made or cold, either way they're delicious. Especially if served with a bowl of sour cream or yogurt sauce.
