This miso and honey mushroom recipe offers you a delicious and surprising sweet-and-salty flavor combination and today’s recipe is without a doubt a perfect everyday option, because you’ll make it in no time and it will liven up any meal with its flavor and contrast.
We prepared the recipe in the Shallow Casserole Balti Dish by Le Creuset, a piece as beautiful as versatile and, without a doubt, very practical:
- its size takes up little but offers you a lot of capacity;
- it lets you cook on the stovetop as well as in the oven;
- It has the qualities of a wok for stir-frying, a high-sided frying pan for frying, and a casserole for oven roasting, as well as for stewing vegetables, meats, and risottos.
- Because it doesn't have a lid, it's much more affordable than a casserole, yet it offers many of its benefits (and it's lighter)
To this day, it’s one of the pieces I use most in my daily cooking, and I invite you to discover and enjoy it with a recipe that suits it wonderfully: thanks to its smaller base but wide mouth, the juices circulate perfectly and the heat penetrates quickly, cooking these mushrooms in about 5 minutes.
Ingredients
- 300 g whole mushrooms
- 2 tbsp olive oil
- 50 g ginger (root, fresh)
- 2 garlic cloves
- 4 tsp brown miso paste
- 2 tsp honey
- 1 tbsp soy sauce
- 4 spring onions
- 1 tsp sesame seeds
- 1 tsp sesame oil
Preparation
- Crush the garlic with a garlic press, finely chop the spring onions and peel and grate the ginger.
- Pour a couple of tablespoons of oil into the Balti Dish and heat over medium heat.
- Add the ginger and garlic to the pan and sauté for a couple of minutes.
- Add the miso paste, honey and soy sauce and cook for one minute. If it seems too dry, add a splash of water.
- Put the mushrooms into the pan and cook them for 5 minutes.
- Now you can decide whether to finish the recipe on the stove or in the oven. If you want to do it on the stove, simply continue cooking the mushrooms for 5 or 6 more minutes, stirring until you see the sauce thicken. If you prefer to finish it in the oven, put the Balti Dish in a preheated oven at 180 ºC and let it cook a few more minutes, until the sauce has thickened.
- Remove from the heat or oven and sprinkle with sesame seeds. When serving, drizzle with sesame oil.

Para aprovechar las propiedades probióticas del miso, es mejor añadirlo al final disuelto en un poco del caldo del guiso cuando ya hemos apagado el fuego. Si lo cocinamos y hierve, matamos las bacterias buenas que tiene y no nos beneficiamos de ellas ;)
