I had been chasing for years to have an ice cream maker like the one I used to prepare the recipe I bring you today. At home I had them crazy with my refrain of... I want an ice cream maker with a compressor! They didn't pay much attention to me so I decided to solve the problem. When I studied pastry making we made delicious ice creams and although it is an art and a science, we can make almost professional ice creams at home. It is true that most of the time we cannot use stabilizers, nor liquid or atomized glucose, but I can tell you that you will enjoy it even more than the ice creams we find in ice cream shops.

Even so, you can also prepare this recipe in your normal ice cream maker and I know you'll enjoy it very much, it's a cool Greek yogurt ice cream for the summer that's just around the corner.

Magimix Expert Ice Cream Maker and Le Creuset Ceramic Ice Cream Cup

Ingredients

  • 170 g sugar
  • 300 g water
  • 150 g cream
  • 250 g Greek yogurt
  • 25 g inverted sugar

Elaboration

  1. We begin by preparing the ice cream, to do this we warm the water and cream to about 40º and add the sugar and inverted sugar, mix well until the sugar has completely dissolved.
  2. Let it cool completely, add the yogurt and blend – it is important that the mixture is very cold before making the ice cream in the machine.
  3. Next, we turn on our Magimix Gelato Expert machine -did I mention it's amazing?-, in cooling mode, and let it cool for about 5 minutes.
  4. Next, we add the cream we have prepared and activate the automatic traditional ice cream mode.
  5. We let the machine do its work and in about 40 minutes you will have the ice cream ready.
  6. Once the ice cream has cooled down, we have several options: put it in the container where we are going to store it in the freezer, put the container where we prepared it in the freezer if we are going to consume it almost immediately, or even leave it in the refrigerator in maintenance mode – this mode is activated only once the automatic cycle has finished.
  7. If you are going to consume it immediately, do not hesitate to serve it in Le Creuset dessert glasses , accompanied by lots of fruit and some wafers, I advise you that you will want to repeat it.
