Would you like to try one of my favorite tartlets? These Goat Cheese Tartlets with Balsamic Onion are perfect for those moments when you want to enjoy something tasty and uncomplicated. If you use refrigerated puff pastry, everything becomes much simpler and you just have to be careful when caramelizing the onion, add generous portions of goat cheese and let the oven do its magic until they are golden and crispy.

Without a doubt, the special touch to these tartlets is provided by the caramelized onions. I recommend in the recipe to make them over the heat with a touch of balsamic vinegar, to enhance their natural sweetness. The contrast between the creamy cheese and the sweet and sour onions is simply irresistible.

You can accompany these delicacies with a salad of tender sprouts and cherry tomatoes, and you will have a combination of flavors that will pleasantly surprise you. Recipe for tartlets with cheese and caramelized onion

Le Creuset ceramic plates

Ingredients

  • 1 refrigerated rectangular puff pastry
  • 2 large onions
  • 50g butter
  • 60 ml balsamic vinegar
  • 25g sugar
  • Salt
  • Black pepper to taste
  • 200 g of goat cheese in a roll
  • 1 beaten egg


Preparation

  1. Preheat the oven to 200°C.
  2. Cut the onions finely.
  3. Heat a nonstick skillet over medium heat and add the butter. Lower the heat when it starts to melt and add the onions.
  4. Sauté the onions over low heat in the butter until they are golden (they begin to look tender and transparent). Add the balsamic vinegar and sugar. Stir and season well with salt and pepper. Booking.
  5. Roll out a sheet of puff pastry (it should be about 3mm thick, if it's thicker you can roll it out). Being rectangular, you can easily make 6 tartlets by cutting it in half lengthwise, and the longest side into 3 parts. Transfer the puff pastries to a Le Creuset nonstick baking sheet , or a perforated one.
  6. Let's assemble the tartlets to bake: place a slice of goat cheese in the center of each puff pastry and fold the corners towards the center.
  7. Brush the edges of the puff pastry with beaten egg and bake for 20-25 minutes, until the puff pastry looks golden brown.
  8. Remove from the oven and add a tablespoon of the balsamic onions on top. You now have them ready to serve!
  9. If you want to serve them as a complete individual dish, arrange some tender sprouts, some walnuts (they go great with these tartlets!) and cherry tomatoes on a Le Creuset plate , and arrange a tartlet on top of the salad.

  1. Instead of making 6 individual tartlets, you can make 4 more generous rectangles (cutting the puff pastry in the shape of a cross, in half horizontally and vertically), or you can even make a whole puff pastry, as a pie or puff pastry pizza, and cut it into the portions you want when serving.
  2. Cheese variation: apart from goat cheese, you can try other cheeses, soft sheep and semis. You can also experiment with mild-tasting cow cheeses such as ricotta cheese, or try brie, camembert... many cheeses are possible in these tartlets.

  3. Add herbs: If you want an extra touch of flavor, you can add fresh herbs such as thyme, rosemary or basil to the caramelized onions. These herbs will complement the goat cheese and balsamic onions very well.
