We got ahead of ourselves! Some time ago we shared an ice cream recipe that everyone who tries it loves, and it caught your attention a lot, the Eton Mess Ice Cream. Maybe before that ice cream recipe we should have told you about the existence of a wonderful English dessert called Eton Mess. So today we bring the recipe to make it!
The Eton Mess is a simple dessert and delicious that combines fresh strawberries, crunchy meringue and whipped cream. It is served "messily", which gives it a rustic and appetizing look... And the result is a mix of textures and flavors that is refreshing and light! I assure you you'll eat every last bit of this recipe.

Ingredients
- 3 egg whites
- 120 g icing sugar
- 500 g strawberries
- 500 ml whipped cream
- 1 tablespoon icing sugar
Preparation
- Separate the egg yolks from the egg whites, and put the egg whites in the bowl of the KitchenAid stand mixer.
- With the balloon whisk attachment, start whipping at high speed. Beat the egg whites until stiff peaks form.
- While the egg whites are mixing, add 1/3 of the sugar (about 40 g) and wait until stiff peaks form again. Repeat twice with the remaining sugar until finished.
- Preheat the oven to 120 ºC.
- Place two large spoons of the meringue on a baking tray lined with parchment paper, and bake for 1 hour and 20 minutes at 120°C. After that time, turn off the oven and let it cool completely inside the oven (open the door slightly, but not all the way, to form a good meringue and prevent it from collapsing).
- In the mixer bowl, now pour in the whipped cream, and mix at high speed until whipped (stop as soon as you see a thick cream; if you continue you'll make butter).
- Now break the meringue into pieces, dividing it into portions. Clean and cut the strawberries in halves or quarters.
- Let's assemble the Eton Mess glasses: place a layer of meringue in the dessert glasses, add a tablespoon of whipped cream and strawberries. Put another layer of meringue, and follow again with cream and strawberries. You can add a little icing sugar to decorate.

Notes
- Marinate the strawberries beforehand! The recipe doesn't require it but they are much more delicious: leave the strawberries a few hours earlier cleaned, cut and mixed with a few tablespoons of sugar to soften and sweeten them. The juice they release you can pour into the glasses with your Eton Mess as a final touch of the assembly (besides giving it a wonderfully decadent note, it's super tasty).
- Add some redcurrants, blackberries, blueberries... They are all a great combination with the strawberries and with the sweetness of the cream and meringue.
- Customize the presentation: serve the Eton Mess in individual glasses as we have done or in a large bowl, decorating with some whole strawberries or pieces of meringue on top.
