Whether as a kingly breakfast or an evening meal with friends, this hummus, tomato and golden nectarine toast leaves no one indifferent: the combination of hummus creaminess and flavor, together with the freshness of the tomato and the juiciness and sweetness of the nectarine is a combination that, although it may surprise at first, is truly delicious.

Both the bread and the tomato and nectarine are briefly pan-seared - it's a great way to intensify their flavors and contrasts. During the recipe, you'll also see that we add smoked paprika and seeds. All of this adds a layer of complexity to the toast that elevates every bite, believe me!

Ingredients

  • 2 slices of bread (long-sliced)
  • 2 tbsp hummus
  • 1/2 tsp smoked paprika
  • 1 tsp sesame seeds
  • 1/2 tsp poppy seeds (optional)
  • 2 tbsp olive oil
  • 1/2 red beefsteak tomato (or another meaty variety)
  • 1/2 yellow beefsteak tomato
  • 1/2 white nectarine
  • 1/2 yellow nectarine
  • 1 handful of fresh basil leaves
  • flake salt

Preparation

  1. Clean and cut the nectarines into quarters (preferably unpeeled, they hold their shape better when heated, and it also adds more fiber).
  2. Cut the tomato into thick slices.
  3. Put the Mineral B iron frying pan over the heat, on low heat, and warm one tablespoon of oil.
  4. Sear the nectarines in the pan for 2 minutes on each side. Set them aside.
  5. Without removing the juice released by the nectarines, place the two slices of bread in the pan and cook them for 2 minutes on each side. Set them aside.
  6. Now, heat one tablespoon of olive oil in the De Buyer Affinity stainless steel frying pan.
  7. Sear the tomato slices for 2 minutes on each side. Set them aside.
  8. Assemble the toast: spread the hummus over the slices of bread, sprinkle with smoked paprika and scatter the poppy seeds on top, place the tomato slices over them and add the nectarine quarters. Do it gently and thanks!
  9. To finish, sprinkle a little flake salt and sesame seeds, and add a few basil leaves.
