We got ahead of ourselves! Some time ago we shared an ice cream recipe that everyone who tries it loves, and it caught your attention a lot, the Eton Mess Ice Cream. Maybe before that ice cream recipe we should have told you about the existence of a wonderful English dessert called Eton Mess. So today we bring the recipe to make it!

The Eton Mess is a simple dessert and delicious that combines fresh strawberries, crunchy meringue and whipped cream. It is served "messily", which gives it a rustic and appetizing look... And the result is a mix of textures and flavors that is refreshing and light! I assure you you'll eat every last bit of this recipe.

I hope this step-by-step recipe for how to make Eton Mess encourages you to try it soon. It's an ideal dessert for warm days and an excellent way to use fresh seasonal strawberries. I hope you enjoy making it and, above all, eating it!

 

Ingredients

  • 3 egg whites
  • 120 g icing sugar
  • 500 g strawberries
  • 500 ml whipped cream
  • 1 tablespoon icing sugar

Preparation

  1. Separate the egg yolks from the egg whites, and put the egg whites in the bowl of the KitchenAid stand mixer.
  2. With the balloon whisk attachment, start whipping at high speed. Beat the egg whites until stiff peaks form.
  3. While the egg whites are mixing, add 1/3 of the sugar (about 40 g) and wait until stiff peaks form again. Repeat twice with the remaining sugar until finished.
  4. Preheat the oven to 120 ºC.
  5. Place two large spoons of the meringue on a baking tray lined with parchment paper, and bake for 1 hour and 20 minutes at 120°C. After that time, turn off the oven and let it cool completely inside the oven (open the door slightly, but not all the way, to form a good meringue and prevent it from collapsing).
  6. In the mixer bowl, now pour in the whipped cream, and mix at high speed until whipped (stop as soon as you see a thick cream; if you continue you'll make butter).
  7. Now break the meringue into pieces, dividing it into portions. Clean and cut the strawberries in halves or quarters.
  8. Let's assemble the Eton Mess glasses: place a layer of meringue in the dessert glasses, add a tablespoon of whipped cream and strawberries. Put another layer of meringue, and follow again with cream and strawberries. You can add a little icing sugar to decorate.

Notes

  • Marinate the strawberries beforehand! The recipe doesn't require it but they are much more delicious: leave the strawberries a few hours earlier cleaned, cut and mixed with a few tablespoons of sugar to soften and sweeten them. The juice they release you can pour into the glasses with your Eton Mess as a final touch of the assembly (besides giving it a wonderfully decadent note, it's super tasty).
  • Add some redcurrants, blackberries, blueberries... They are all a great combination with the strawberries and with the sweetness of the cream and meringue.
  • Customize the presentation: serve the Eton Mess in individual glasses as we have done or in a large bowl, decorating with some whole strawberries or pieces of meringue on top.
