Sometimes we complicate our lives looking for recipes to impress at home, without realising that making something delicious can be incredibly simple. Like these eggs with pesto I'm bringing you today. I assure you there's no easier recipe than this one, ready in the blink of an eye, and you'll love it — Claudia's word!
As you probably know, I'm a big fan of egg recipes. Cooked in any way, I find them delicious. And in this way, made in a pan that treats them delicately, like the Pro Le Creuset Non-Stick Frying Pan, if I tell you they are plate-licking good, I wouldn't be exaggerating. In this simple preparation, each ingredient adds wonderfully to the final result. How can something so simple be so delicious?
The perfect combination of avocado, goat's cheese log, pesto (preferably homemade), your best bread, and the freshest eggs is the key to success. To show you that I'm not exaggerating, here is the eggs with pesto recipe and the step-by-step video. I encourage you to try it to see for yourself!
Ingredients
- Eggs (1 or 2 per person)
- Pesto sauce (to taste)*
- Avocado
- Goat's cheese log
- Salt
- Pepper
- Sesame seeds
- Bread (1 or 2 slices per person)

Preparation
- Heat your Pro Le Creuset Non-Stick Frying Pan and spread several generous spoonfuls of pesto.
- Once hot, add the eggs and let them cook until the whites are fully set with the pesto.
- While the eggs are cooking, cut the avocado, remove the flesh, and mash it with a fork.
- Toast the bread slices, place them on the plate, and spread the avocado flesh on top.
- Break up the goat's cheese log and sprinkle it evenly across the toast.
- When the eggs are ready, place one on each slice of bread. Don't forget to scoop up some of the pesto with the spatula!
- Sprinkle sesame seeds, a pinch of salt, and freshly ground pepper.
