I bring you two recipes with dates hot that are as elegant as they are surprising. One is an appetizer most elegant and with which you'll look fabulously good when you present it at the Sunday table. The second suggestion can be both a dessert and a snack to finish the meal, with which you seek a mild combination of flavors and play with textures.
In both cases they are very easy recipes to prepare. You'll see they take very little time and with them you'll look fabulously good with your guests. I think it's a perfect appetizer, an exquisite snack and a real crowd-pleaser. I love it!
IMPORTANT NOTE! You can make these same recipes with dried figs: dried figs combined with walnut and cheeses (whether Parmesan in the first recipe or fresh cheeses in the second) pair deliciously well, so you can make the same recipe with dried figs.
Warm Dates with Walnuts and Parmesan Recipe
Ingredients
- 24 pcs Large Medjoul Dates*
- 24 Walnuts (one per date)
- Parmesan cheese (whole or in slices, not grated)
- Olive oil
Preparation
- Open the dates by making a lengthwise cut and remove the pit.
- Slice the cheese into shavings using a peeler and place one or two slices of Parmesan inside each date.
- Inside, on top of the cheese, place a walnut, and arrange the stuffed dates on a baking tray, spaced apart.
- Bake for about 10 minutes at 180 ºC, until the dates are hot.
- Remove from the oven, place on a nice tray to present them at the table and drizzle a little oil on top.
Notes:
- The charm of this appetizer is serving it hot, although they are still tasty if they cool slightly.
- If you like contrast, add a bit of flaky salt at the end, when you drizzle the oil. The salt will also help emphasize the sweetness of the date.

Dates with Ricotta and Walnuts Recipe
Ingredients
- Medjoul Dates
- Walnuts (as many as dates)
- Ricotta or mató
- Mild honey or maple syrup
- Flaky salt
Preparation
- Open the dates by making a lengthwise cut and remove the pit.
- With a small spoon, place a bit of mató or ricotta inside each date.
- On top of the ricotta, place a walnut, and arrange the stuffed dates on a baking tray, spaced apart.
- Bake 5 minutes at 170 ºC, just so the dates take on a bit of warmth.
- Remove from the oven, place on a nice tray to present them, pour a little honey or agave syrup over them and sprinkle with some flakes of salt.
