What a great quick cookie recipe! Brown sugar, butter and ginger cookies. Super quick to make... And to eat! These cookies will become a household staple if you try them, because they're delicious.
Today we made cookies with the kids, and besides having a blast shaping and decorating their cookies however they wanted, some SUPER DELICIOUS cookies came out. These cookies do have a noticeable amount of ginger, but the flavor blends into the butter and brown sugar and it doesn't become an overpowering ginger intensity; on the contrary: you get spiced cookies that are truly delicious. So I leave you the recipe in case you feel like making your Sunday a cookie Sunday too.

Shape them however you like, whether round, square, like churros or in animal, star shapes or whatever the little ones fancy. Then, simply decorate them with sugar or chocolate chips — anything looks great on them.

Ingredients
- 150 gr butter at room temperature
- 90 gr brown sugar
- 1 XL egg
- 50 ml milk at room temperature
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 level tsp ginger
- 1 tsp baking soda
- 130 gr pastry wheat flour
- 130 gr wheat flour
Preparation
- Place the butter in the KitchenAid bowl and turn on the mixer with the paddle attachment with flexible edge at speed 2.
- Add the brown sugar and let it incorporate.
- Add the egg, lightly beaten beforehand.
- Add the milk, vanilla extract and ginger.
- In a bowl mix the flours with the salt and baking soda and add it to the KitchenAid bowl. Mix everything until well combined and ideally chill in the fridge for half an hour.
- Preheat the oven to 190 ºC.
- While the oven heats, form the cookies: on a perforated tray lined with baking paper or a mat, form the cookies (you can make balls and flatten to get round cookies, or roll out the dough and cut the shapes you want).
- Add the filling or decoration you like (ideas below), or simply sprinkle vanilla sugar on top.
- Bake the cookies on the middle rack for about 10 minutes or until the cookies look golden but still feel slightly soft to the touch. Remove from the oven and let cool; they will firm up and set in a few minutes.

Ideas to decorate your butter and ginger cookies (inspired by my kids)
A little cheerfulness will suit the cookie great. There are many options, like adding icing or drizzling a bit of syrup on top, but here are some very simple options we love at home and usually make:
- Sprinkle vanilla sugar or brown sugar (one of my favorite options) all over the cookie or a little in the center. It decorates, adds flavor and a bit of delicious crunch.
- Add chocolate sprinkles or chocolate pearls.
- Decorate with colored sprinkles or balls.
- Decorate with shredded coconut, or with coconut and chocolate sprinkles (a winning combination).
- Mix the dough with chocolate sprinkles and/or coconut, then form the cookies. They will be cookies with a surprise inside.
- Instead of sprinkles, use chocolate chips or chop dark or white chocolate and add it to the dough.
When you add these decorations, remember not to leave them loose but press the sugar and chips lightly with your finger so they stick slightly to the dough, otherwise they may fall off when lifting the cookies.
Simple and very impressive, these cookies are irresistible. I recommend making them!
