What beautiful sunny days we've had these past weeks, 100% spring, everything full of flowers and with sun rays that already warm. My children already ask me to have a snack in the garden almost every afternoon and they even fancy going out for a snack at the weekend while we take long walks in the countryside. Just last week, thinking about the different options I can prepare for their snacks, I saw that besides their favorite sandwiches, cookies are what they like most. So why not bake them at home to make them healthier? That way I can play with different flavors and make their snacks something different every day.


Today I bring you one of their favorites: oat and chocolate cookies, with a crunchy texture and intense flavor plus that extra touch of chocolate that makes them irresistible! At home they're a hit and they love them both for snacks and for school breakfasts. Knowing how much they like them, this weekend I wanted to surprise them and thought that having the fantastic Le Creuset skillet pans could be used as allies to bake some maxi-cookies in!

I should have photographed their faces when after a long walk in the woods they asked for a snack and I brought out the XXL cookies, hahaha!!! They were amazed they were so big… "but mom, how did you make them???…" Well, the truth is it was easy to prepare and a lot of fun to see the result. In no time I had a batch of maxi-cookies to take on our outing along with their favorite juices. Will you try them??

The Le Creuset skillets están hechas de cast iron que consigue que el calor se reparta de manera homogénea por toda la superficie y que es perfecta tanto para cocinar en ellas como para hornear. En este caso, me sirvieron como molde para conseguir unas cookies de un tamaño superior y que salieran perfectas!

Ingredients

90g rolled oats
180g flour
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
100g brown cane sugar
100g white sugar
80g chocolate chips or drops (you can use whichever you prefer: white, dark or milk chocolate)
1 egg
100g melted butter
1 teaspoon vanilla extract (you can substitute with a pinch of ground cinnamon)

Preparation

Preheat the oven to 175ºC. In a bowl mix all the dry ingredients: flour, oats, baking powder, baking soda, salt and both types of sugar. Also add the chocolate chips.
On the other hand, beat the egg and add the vanilla extract and the warm melted butter. Mix and pour the wet ingredients into the bowl with the dry ingredients and use a wooden spoon or spatula to mix until it becomes easier to work with your hands and form a well-mixed dough ball.

From there, and depending on the diameter of our skillet, form dough balls. For the skillet of 16cm a dough ball of approximately 135-140g and for the 20cm I made a ball of approximately 170g. With this amount of dough you'll get between 4 and 6 maxi-cookies, although if you form small cookie-sized balls (3.5 cm), you'll get about 23-25 cookies. We don't need to grease the skillet because the fat already in the dough is sufficient, but if you want you can place a piece of baking paper on the bottom.

Bake for 12-14 minutes for the small ones and 18 minutes for the large ones, or until you see the cookie edges are golden. Then remove the skillets from the oven, place on a rack and let cool for a few minutes. After that, with the help of a spatula and carefully so as not to damage them, take them out of the skillet and let them cool completely on the rack.

Buenos días,
Buenisimas las galletas!! Yo llevo una alimentación vegana, y algunas recetas les cambio algún ingrediente para adaptarlo, esta vez he suprimido el azúcar blanco y la mantequilla la he cambiado por el aceite de coco.
