Are you looking for a complete starter that's healthy, tasty and quick to prepare? This chickpea recipe with roasted vegetables in the Ninja CRISPI air fryer has it all. Chickpeas provide plant-based protein, fiber and minerals like iron and magnesium, making them an excellent option for lighter, balanced meals.
The vegetables —zucchini, carrot, bell pepper, red onion and cherry tomatoes— are quickly roasted by the hot air in the fryer, achieving a crispy exterior and tender interior, which makes this dish an ideal choice for lunches or dinners when you want something complete without the hassle. Also, cooking with the Ninja CRISPI optimizes time and flavor: in just a few minutes you'll have an attractive, nutritious and colorful dish ready. And in a glass container, free of nonstick coatings!

Follow the steps below in the video recipe. You'll see it becomes a daily classic because it tastes delicious, is complete and full of color... and flavor!
Ingredients
- 1 jar of cooked chickpeas
- Zucchini
- Carrot
- Red bell pepper
- Red onion
- Cherry tomatoes
- AOVE
- Salt and pepper
- Spices to taste (rosemary, herbes de Provence, a pinch of sweet paprika...)
- Optional: sweet corn
Preparation
- Cut all the vegetables into cubes using the Treppo dicer and stick cutter from Gefu.
- Place them in the basket of the Ninja CRISPI air fryer, add the cherry tomatoes, a good drizzle of AOVE, salt, pepper and spices. Mix well.
- Cook using the Air Fry program for 10 min.
- Halfway through cooking, add the chickpeas (previously rinsed and well dried).
- Cook 5 more minutes and it's ready!

Notes
- If you prefer your vegetables more roasted, let them cook a couple more minutes before adding the chickpeas, but you'll see that the Crispi, with its basket so close to the hot ventilation motor, roasts everything very quickly
- You can add sweet corn if you like; roasted with the spices alongside the other vegetables it adds texture and a flavor that pairs wonderfully.
- Serve them on their own or accompany with rice, couscous, or a dollop of yogurt or tahini sauce on top.
