There are also versions where the ingredients of both doughs are combined into one, aiming to balance the flavors and textures of both classic sweets.

To prepare them, we bake in a 23 cm Naturals Nordic Ware pan, perfect for this type of baking: it heats up super quickly, so in just a few minutes you'll have your brookies ready.

How to make brookies: the recipe
Ingredients
For the cookie dough:
- 120 g all-purpose flour
- 110 g brown sugar
- 50 g white sugar
- 80 g unsalted butter, melted and slightly cooled
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 large egg
- 1/2 cup chocolate chunks
- 1/2 cup mini chocolate chips
For the brownie batter:
- 3 large eggs
- 1 cup dark cocoa (about 100 g)
- 1 tsp salt (5 g)
- 2 tsps vanilla extract
- 180 g unsalted butter
- 250 g white sugar
- 3/4 tsp baking powder (chemical leavening, approx 3 g)
- 125 g all-purpose flour
- 1 1/2 cups chocolate chunks (approx 250 g)
Preparation
Make the cookie dough:
- Sift the flour, baking soda and salt into a bowl. Set aside.
- Use the KitchenAid mixer with the whisk attachment to beat the brown sugar, white sugar and the melted butter for 1-2 minutes.
- Add the vanilla and the egg, making sure they are well incorporated.
- Gradually add the reserved dry ingredients mixture until you obtain a homogeneous dough.
- Finish by adding the chocolate chips and chocolate chunks, folding gently.
Make the brownie batter:
- In another bowl, sift the flour, baking powder and salt.
- Beat the eggs, vanilla and cocoa powder with the mixer and the paddle attachment.
- Melt the butter in a microwave-safe container, mix in the sugar and heat 30 seconds more to dissolve the sugar well.
- Combine the butter and sugar mixture with the previously beaten ingredients, mixing on low speed until smooth.
- Incorporate the dry ingredients and the chocolate chunks, mixing until everything is well combined.

Assembly and baking:
- Preheat the oven to 180°C and line a 23x23 cm square pan with parchment paper.
- Spread ¾ of the brownie batter on the bottom of the pan, using a spatula to distribute it evenly.
- With an ice cream scoop, distribute portions of the cookie dough over the brownie, leaving uncovered spaces.
- Add the remaining brownie batter to fill the empty spaces and smooth the surface.
- Bake for 30 to 35 minutes or until you see the edges and almost all of the center are firm to the touch.
- Let cool in the pan on a rack before cutting into portions to serve. Remember that leftover cookie dough can be baked separately or frozen for another time.

Notes
- Choice of Cocoa: Using dark cocoa in the brownie batter brings a deep flavor and an impressive appearance, but make sure your guests appreciate the intensity this ingredient provides. If you prefer something milder, consider adjusting the amount or using a blend of cocoas.
