A few days ago we brought you some basic waffle recipes . Beatriz, author of To Be Gourmet , has already released her waffle maker, and brings us a new recipe that you are going to love: traditional Belgian waffles accompanied by chocolate and mango. How many times will you want to have breakfast?

Belgian waffles are truly delicious and it's not easy to find a place that does them well. Whenever I've seen a waffle stall, especially in France, I've immediately jumped to buy them, enraptured by the pleasant smell they give off.

Now that I've got my hands on the Nordic Ware waffle maker I can make them at home all winter long. Well, right now! With this recipe they come out delicious, and also once we have the dough they couldn't be easier to prepare. Who are encouraged?

Nordic Ware waffle iron and Le Creuset Damascus steel knife .

Ingredients (for 8 waffles)

  • 100 ml of milk
  • 10g of fresh yeast
  • 250g of flour
  • 1 egg
  • 150g of ointment point butter
  • 1 tablespoon of vanilla essence
  • 20g of brown sugar
  • 15g of white sugar
  • 125g of pearl sugar
  • 1 handle
  • 200gr of 70% chocolate

Preparation

  1. In the KitchenAid glass we bring the milk to room temperature and add the yeast. With a silicone spoon we remove until it dissolves.
  2. Add the flour, the egg, the brown sugar and the white sugar and beat at speed 4 (medium/high) until everything is well integrated.
  3. Add the soft butter and beat again until you get a smooth and uniform dough.
  4. We cover the KitchenAid glass with a transparent film and let it rest for a couple of hours in a place away from drafts.
  5. Uncover and add the pearl sugar.
  6. With the help of a silicone spatula mix well.
  7. Let rest for another half hour.
  8. We are placing portions of dough on the spaces of the waffle iron , we can use them all at the same time or just one.
  9. We close the waffle iron and place it on the fire or ceramic hob at medium temperature.
  10. The waffles are done in four to five minutes. During this time we have to turn the waffle iron so that they are made on both sides.
  11. It is important to open to see how it goes and that they do not burn. During the first minute it is better not to do it, since the dough is still very soft, then every time it is turned around (3 or 4 times) it is convenient to see how they are to control the toasting that we want to give it.
  12. We wash the mango well and with a mandolin we make fine cuts, the shape does not matter; the one that allows us the fruit to save the bone. We reserve on a plate.
  13. In a glass we melt the chocolate in the microwave taking care not to burn it, it is better to add ounces little by little until we have the full amount
  14. Pour some chocolate over the waffles and garnish with the mango.

If you want them to be perfect squares, spread the dough a little with your fingers to the sides once it is placed. If, on the other hand, you like them with a more irregular appearance, you don't need to do this, they will come out trimmed on the sides like the ones they make in street stalls and that's how they also have their charm.

He hecho la receta y me ha encantado, la mejor que he probado hasta ahora. Tan solo reduciría la cantidad de azúcar a la masa para que no quedasen tan dulces.
