A few days ago we brought you some basic recipes for making waffles. Beatriz, author of To Be Gourmet , has already used her waffle maker, and brings us a new recipe that you will love: traditional Belgian waffles accompanied by chocolate and mango. How many times will you want to have them for breakfast?

Belgian waffles are truly delicious and it is not easy to find a place that makes them well. When I have seen a waffle stand, especially in France, I have immediately rushed to buy them, enthralled by the pleasant smell they give off.

Now that I've got my Nordic Ware waffle maker, I can make them at home all winter long. Well, right now! They come out delicious with this recipe, and once we have the dough, they couldn't be easier to make. Who's up for it?

Nordic Ware waffle maker and Le Creuset Damascus steel knife .

Ingredients (for 8 waffles)

  • 100ml of milk
  • 10gr of fresh yeast
  • 250gr of flour
  • 1 egg
  • 150gr of butter at room temperature
  • 1 tablespoon vanilla essence
  • 20gr brown sugar
  • 15gr of white sugar
  • 125gr of pearl sugar
  • 1 mango
  • 200gr of 70% chocolate

Preparation

  1. In the KitchenAid bowl, place the milk at room temperature and add the yeast. Using a silicone spoon, stir until it dissolves.
  2. Add the flour, egg, brown sugar and white sugar and beat at speed 4 (medium/high) until everything is well combined.
  3. Add the soft butter and beat again until you obtain a smooth and uniform dough.
  4. We cover the KitchenAid bowl with cling film and let it rest for a couple of hours in a place away from drafts.
  5. We uncover and add the pearl sugar.
  6. Using a silicone spatula, mix well.
  7. We let it rest for another half hour.
  8. We place portions of dough on the spaces of the waffle maker , we can use them all at once or just some.
  9. We close the waffle maker and place it on the stove or ceramic hob at medium temperature.
  10. The waffles are cooked in four to five minutes. During this time we have to rotate the waffle maker so that they are cooked on both sides.
  11. It is important to open the dough to check how it is going and to make sure it doesn't burn. It is best not to do this during the first minute, as the dough is still very soft. Then, each time you turn it over (3 or 4 times) it is a good idea to check how it is browning to control how much you want to give it.
  12. We wash the mango well and with a mandolin we make thin cuts, the shape doesn't matter; whatever the fruit allows us to avoid the stone. We set it aside on a plate.
  13. In a glass, melt the chocolate in the microwave, being careful not to burn it. It is better to add ounces little by little until you have the full amount.
  14. Pour a little chocolate over the waffles and garnish with the mango.

If you want them to be perfect squares, spread the dough a little with your fingers towards the sides once it is placed. If, on the other hand, you like them with a more irregular appearance, you don't need to do this, they will come out cut on the sides like those made in the street stalls and so they also have their charm.

He hecho la receta y me ha encantado, la mejor que he probado hasta ahora. Tan solo reduciría la cantidad de azúcar a la masa para que no quedasen tan dulces.
