Lola, author of Loleta, Life&Market , brings us a recipe that will easily become a classic at dinners with friends: rich, easy and delicious beef fajitas, which with few complications you can prepare to enjoy in style.

If there is one thing that always makes me look good at the table, it is fajitas . I usually prepare them whenever I have an informal lunch or dinner, or when my son invites his friends to watch a movie.

Fajitas are ideal because they allow everyone to prepare their own dish as they please, so you only have to serve the ingredients separately to please everyone. Plus, you can have everything ready in advance, so you can enjoy football, friends or snacks without the stress of having to worry about it.

Although I make them quite spicy because we all love rock & roll at home, you just have to modify the amount of chili powder and omit the serrano chili to make them less spicy.

Ingredients

    For the garnish:

    • 1 green bell pepper, thinly sliced
    • 1 red pepper, thinly sliced
    • 1 yellow pepper in thin strips
    • Guacamole

      Preparation

      1. In a bowl, mix the meat with the lime, cumin, salt and chili powder. Mix well.
      2. In a frying pan, brown the garlic and chopped onion at low temperature until soft.
      3. When the onion is soft, add the meat to the hot pan.
      4. Cover and cook over low heat until the meat is tender.
      5. In another pan , sauté the pepper strips.
      6. Heat the tortillas in the microwave for about 30 seconds. Depending on the microwave, they should be heated before or after and the number of tortillas you are heating. You can also heat them in a frying pan or paella pan without any oil.
      7. Serve with all the ingredients separated so that everyone can assemble the tortilla to their liking, adding a little meat and peppers and seasoning it to taste with guacamole.

Le Creuset cast iron skillet with wooden handle, Le Creuset spatula and Trilloliva oil

I love to serve it with citrus water and grenadine : in a jug, put ice and some chopped oranges and limes. Add water and let it cool. Serve with a little grenadine in a glass jug . It's an ideal refreshment: easy, healthy and fun that will help you calm the spiciness of the fajitas.
