Once summer arrives at my house, we turn off the oven and fire up the grill. Besides how practical it is to make dishes on the grill, you should keep in mind how healthy it is to cook fish and meats with just a splash of olive oil. Vegetables are another ally of the grill; it’s wonderful when we bring the two together—fish or meats and vegetables.
Well then, today I bring you a fruit recipe so you can use your grill even more this summer. I imagine for many it will be the first time you consider cooking fruit this way, but I assure you that once you do, it won’t be the last. Apricots are another undisputed star of summer. Many sweet recipes include this fruit in cakes, tarts, and ice creams, but it is not very common to find it as an ingredient in appetizers or salads combined with other savory ingredients like ham.
For those who like the classic melon with ham, you will discover in this recipe a fresh dish that combines the sweet-and-sour of caramelized apricot on the grill with the saltiness of Ibérico ham. An appetizer or salad that will be a hit at your summer dinners.

Ingredients
- 1 Kg of apricots not very ripe
- 100gr of Iberian ham
- Arugula to accompany or other salad leaves
- 1 tablespoon of olive oil
Preparation
- We wash the apricots well, cut them in half and remove the pit. We heat the grill by Le Creuset and brush it with the oil (you can use a kitchen brush).
- Spread the apricots across the entire grill, and let the apricot’s natural sugar caramelize. Remove and let cool.
- We prepare a tray with a bed of arugula and place the ham in little rolls. Add the apricots and serve.
