Today I come with something different, a selection of toast recipes (or toasted breads) that is ideal as an improvised dinner or as a quick appetizer and is always a hit with guests. Preparing some assorted toasts isn't difficult at all and the result is, besides very eye-catching, incredibly tasty.

You can make them with any type of bread, whether with a narrow baguette-style loaf or a wider loaf or even a boule, but in those cases I recommend cutting the slices in half, making smaller bites that will prevent you from getting full with just one toast.

So you can choose the ones you like best or serve a varied assortment that will delight all diners, we are going to make these five assorted toasts, as easy to prepare as they are impressive and delicious:

  1. Tomato and anchovy toast
  2. Caprese toast
  3. Salmon toast with crème fraîche
  4. Ratatouille (pisto) toast with fresh cheese
  5. Scrambled eggs toast with ham and tomato

As you'll see below, preparing these 5 toasts is not difficult and they are a perfect wildcard for any meal of the day, whether an impromptu appetizer or a snack-dinner you'll have ready in no time. And since bread is the star ingredient, it's well worth getting it from a good bakery or baking your best loaves for the occasion.

Here are the recipes for these delicious toasts!

 

1. Tomato and anchovy toast

Ingredients

  • Bread
  • Red tomatoes (your favorite variety, but firm ones)
  • Anchovies
  • Minced garlic
  • Chopped parsley
  • Salt
  • Extra virgin olive oil

Preparation

  1. Cut the bread into slices about a finger thick and toast them.
  2. Wash the tomatoes, cut them into brunoise (small dice) and put them in a bowl.
  3. Add a little salt and a splash of olive oil and stir gently.
  4. Spread a spoonful of the chopped tomato over the bread slices.
  5. Place an anchovy on top of the tomato and sprinkle with a bit of minced garlic and chopped parsley.

Notes

  • Try the same toast, but replacing the anchovy with anchoa, roasted or canned sardine, or with some flakes of desalinated cod. You’ll see how delicious it is!

2. Caprese toast

Ingredients

  • Bread
  • Pera cherry tomatoes
  • Mozzarella
  • Oregano (fresh or dried)
  • Salt
  • Extra virgin olive oil

Preparation

  1. Cut the bread into slices about a finger thick and toast them.
  2. Wash and cut the cherry tomatoes in half. Add salt and a little oil and set aside.
  3. Tear the mozzarella into pieces and distribute them over the toasted bread slices.
  4. Place the cut tomatoes over the mozzarella so the cut side touches the cheese and sprinkle a little chopped oregano over each toast.

Notes

  • If you like, you can use a fresh cheese (type Burgos, mató or even feta) instead of mozzarella.

3. Salmon toast with crème fraîche

Ingredients

  • Bread
  • Some slices of smoked salmon
  • Crème fraîche (or a creamy spreadable cheese)
  • Rosemary honey (or a mild honey)
  • Chopped walnuts
  • A little finely chopped fresh rosemary
  • Freshly ground black pepper

Preparation

  1. Cut the bread into slices about a finger thick and toast them.
  2. Generously spread the bread with the crème fraîche or with the cream cheese you have chosen.
  3. Place some slices of smoked salmon on top of the cream and garnish with fresh rosemary, freshly ground black pepper and walnut pieces.
  4. Add a drizzle of honey on top before serving, using a honey spoon.

Notes

  • This combination is simply delicious and if you use a walnut or rye bread, German-style, the result is even better.
  • You can swap the crème fraîche for a mild, very creamy blue cheese to get a different and also very tasty toast.

4. Ratatouille (pisto) toast with fresh cheese

Ingredients

  • Bread
  • Homemade ratatouille (pisto) (the one you usually make, using seasonal vegetables)
  • Fresh cheese (the one you prefer) or feta cheese
  • Extra virgin olive oil

Preparation

  1. Cut the bread into slices about a finger thick and toast them.
  2. Place a generous spoonful of pisto on each bread slice, spreading it evenly.
  3. Top with some crumbled cheese.
  4. Drizzle a little olive oil on top before serving.

Notes

  • To make pisto at home you'll only need some finely chopped garlic cloves, onion, green pepper, zucchini and tomatoes. You can also add eggplant and red pepper. Cut everything into dice (with the Gefu Treppo cutter you'll have them in no time) and sauté until done, and you'll have a delicious pisto that you can store in jars and freeze for your meals, accompanying anything from cod loins to scrambled eggs, for a delicious Riojan pisto. 5. Scrambled eggs toast with ham and tomato

Ingredients

  • Bread
  • Eggs
  • Serrano ham sliced thinly
  • Red tomatoes (the ones you like best, but firm)
  • Extra virgin olive oil
  • Salt
  • Freshly ground black pepper
  • Lamb's lettuce (mâche)

Preparation

  1. Cut the bread into slices about a finger thick and toast them.
  2. Place a slice of ham on each bread slice.
  3. Cut the tomatoes into wedges and set aside.
  4. Lightly beat the eggs with a little salt and freshly ground black pepper and cook them in a frying pan with a little olive oil, stirring constantly until they set and you see curds forming.
  5. Spread the scrambled eggs over the ham using a spoon.
  6. Place a couple of tomato wedges on the scrambled eggs and garnish with some fresh mâche.
  7. Sprinkle salt and black pepper before serving.

Notes

  • If you want to give the scrambled eggs a bit of creaminess, you can add a splash of cream or a teaspoon of cream cheese to the eggs when you beat them, before putting them in the pan.

Me atrevo a añadir una tosta deliciosa, si bien yo me la hago en una pequeña baguette, ingredientes: una baguette pequeña, anchoas en aceite de oliva, un tomate no muy maduro, una bola de mozzarella 125gr.aprox., hojas de albahaca fresca no muy pequeñas.
Abrimos la baguette en dos.Tostamos ligeramente el pan, extendemos las anchoas escurridas de aceite que reserváremos, ponemos rodajas de tomate no muy gruesas, y loncheamos la bola de mozzarella extendiendo las lonchas sobre el tomate y sobre el queso pondremos las hojas de albahaca como una cama, sobre la otra parte del pan echaremos el aceite de las anchoas que habíamos reservado y tapamos el bocadillo presionando bien y lo envolvemos en film firmemente, introduciéndolo en el frigorífico un rato para que resulte un bocado refrescante ideal para el lunch o cena del verano.
