Stuffed eggs are a classic, and apart from being delicious, they are a perfect way to accompany a salad, a fish dish, rice... and without a doubt they are the perfect appetizer at big celebrations, as they are the most elegant on the table and you make many of the diners happy.

Deviled eggs are often served simply with mayonnaise, but there are delicious and varied combinations to prepare them.   • 6 large eggs
  • 200 g pumpkin, peeled and cut into cubes
  • 2-3 tablespoons mayonnaise
  • 1 teaspoon mustard (optional)
  • Salt and pepper to taste
  • Sweet paprika to decorate
  • Chopped fresh chives or parsley, to decorate

Preparation

  1. Cook the eggs: Put the eggs in a pot and cover them with water. When the water starts to boil, lower the heat and let it simmer for 10 minutes. Then, take them out and soak them in cold water to cool them down. Once cool, peel them.
  2. Cook the pumpkin: While the eggs are cooking, cook the pumpkin cubes in boiling water until soft, which should take about 15-20 minutes. Drain them well and let them cool slightly.
  3. Make the filling: Puree the cooked pumpkin with a fork or in a blender until puree. To this puree, add the mayonnaise and mustard (if you decide to use it). Season with salt and pepper to your liking and mix until everything is well integrated and you have a creamy mixture.
  4. Prepare the eggs: Cut the boiled eggs in half lengthwise and carefully remove the yolks. Mix these yolks with the pumpkin puree until the mixture is homogeneous.
  5. Fill the eggs: Use a spoon or pastry bag to fill the egg halves with the pumpkin mixture. Make sure you fill each hole well and that the filling is a little puffy.
  6. Decorate: To give a touch of color and flavor, sprinkle a little sweet paprika over each deviled egg. Garnish with chopped fresh chives or parsley to add freshness.
  7. Serve: Before serving, let the deviled eggs sit in the refrigerator for at least an hour so the flavors can concentrate. Enjoy them cold as a starter or part of a festive meal.
