Rosa Ardá, whom many of you know from her blog Velocidad Cuchara, has delighted me with the delicious, fluffy and irresistible muffins she prepared. Some of you may think making muffins is simple. I would say it’s not complicated, but getting that exact point that makes them wonderfully appealing to the eye and palate takes a bit of skill!

The recipe Rosa proposes is a traditional muffin recipe, the classic ones made with extra virgin olive oil.

In the post (here), she gives several tips that I think will interest you. One I consider important is that she solves a problem we often encounter: How do you keep the muffins firm, preventing the batter from spreading sideways so they rise up? The answer is to put the paper muffin liners inside a rigid pan, such as the Le Creuset nonstick cupcake pan.
