Patricia, author of Flavors and moments, today brings us some homemade popsicles that are a feast for the eyes: it’s a combination of colorful fruits that is delicious and incredibly beautiful. I invite you to let your imagination run wild and create your own version!

It’s so hot across most of our country, isn’t it? So, to share a tempting recipe, what could be better than some smoothie popsicles that not only cool us down these days, but also hydrate us and give us vitamins?

At home I’m very picky and I like them to be homemade, and since they’re quick and easy to make, we can choose our favorite ingredients! Today we’re going to make the most of fruit in a thousand colors to create these attractive popsicles with our favorite smoothies prepared in the Zoku T-shirt (although they can also be made in 7 minutes in the Zoku Quick Pop refrigerator).

What’s more, they’re so easy that my kids, who are now old enough to try their hand in the kitchen, make them themselves… Bananas, pineapple, peaches, kiwi… everything they find in the fridge drawer, finely blended and spooned out to create these rainbows of color! Come on, let’s get to the recipe!

Zoku Popsicle Molds

Ingredients for a 6-popsicle mold

For the base filling:
  • 3 frozen bananas (or fresh if you have them)
  • 3 Greek yogurts
  • 3 tablespoons of agave syrup (or honey)
To add to the base filling and add colors:
  • Frozen berries (Blueberries, blackberries, raspberries..)
  • Frozen chopped pineapple (or fresh)
  • Frozen chopped peaches (or fresh)
  • Frozen chopped kiwi (or fresh)
  • Frozen chopped mango (or fresh)
  • A handful of fresh spinach.
  • A small orange

Preparation

  1. We start by putting the ingredients for the base filling in our food processor or blender jar y we mix until we get a smooth, homogeneous cream. If it seems very thick, we can always add some liquid to help blend (a little water or orange, lemon, or coconut juice).
  2. Pour this smoothie into a pitcher or container, from which we'll portion out small amounts and add the fruits by color to get the colored smoothies to form the rainbow in our molds.
  3. Rinse the blender jar, pour about 200ml of base filling, and start assembling the colorful smoothies. Begin with the berry layer, which will be the first one we pour into the molds. For this, add strawberries, blueberries, raspberries, blackberries… Blend well and, with the help of a spoon, carefully distribute it over the base of our molds.
  4. We rinse the blender jar each time to blend the different layers. We now continue with an orange layer, for which we’ll add to our base mixture mango, peach, orange, apricots, loquats… Any fruits that enhance this color and that you have on hand. Again, with the help of a tablespoon, we pour the smoothie into our molds over the bottom layer.
  5. For the yellow layer, we will add the chopped pineapple to our base recipe. And we will pour it into the molds.
  6. Finally, we’ll fill with the green layer: to our base recipe we’ll add a handful of fresh spinach leaves, chopped kiwi, some frozen peas, some broccoli … anything green you can think of, to which we can add a small piece of pineapple to add sweetness. Using a spoon, we fill our Zoku molds, being careful not to go all the way to the edge because as it freezes, the filling's internal volume expands and they wouldn't stay properly sealed.
  7. It's normal for some layers to have mixed a bit and to form waves where some colors seep into the spaces of others, but they'll look amazing afterward!! Now straight into the freezer! (or just wait 7 minutes if you're using the ice cream maker Zoku Quick Pop)
  8. To unmold, simply hold the molds under warm tap water for a few seconds and gently work them until they come out of the molds.
  9. Once unmolded, we can cover them again with plastic wrap and put them back in the freezer in a zip-top bag. This way we’ll have our molds available again to create new popsicles and flavors!
