I'm sure more than once you've wanted to know how to make homemade cocoa and hazelnut spread (the well-known Nutella or Nocilla). It's one of those foods that all kids like and, let's be honest, we grown-ups also enjoy eating it by the spoonful!

Today we're making it at home, to make sure we don't add an indecent amount of sugar and additives, with the added pleasure of making it ourselves.

You'll see that making hazelnut spread is not complicated at all. What will you need? Quality ingredients, a good blender or food processor to grind the hazelnuts, and a few minutes to make it. Claudia's word.

Ingredients

  • 100 gr of peeled hazelnuts
  • 35 gr of mild oil*
  • 30 gr of pure cocoa powder
  • 60 gr of brown sugar
  • 120 ml whole milk

*You can replace it partially or completely with hazelnut oil.

Preparation

  1. Arrange the hazelnuts on a baking tray in a single layer. Roast them for about 15 minutes at 180º (about 10 minutes if the oven is fan-assisted). Stir them from time to time so they toast on all sides. You now have toasted hazelnuts, ready to start making the cream.
  2. Put the hazelnuts in the mixer or in the food processor where you are going to blend. Add the oil and start the blender to get a somewhat viscous paste. You can also process it in the food processor CookExpert (you can use the included processor attachment, or the stainless steel bowl at speed 14). You should get a fairly fluid liquid mixture, the color of hazelnuts.
  3. Add the sugar, cocoa, and milk and keep blending. If you use a blender, the function will help you Press to give an extra boost and achieve a very fine texture quickly. You should end up with a dark cocoa cream.
  4. Your cocoa spread is ready. What do I recommend you do? Taste it. You might want to intensify the hazelnut flavor, or maybe try a bit more sugar. Some people also add a drop of vanilla extract!

Notes

  • If you want a thinner texture, add more milk; if you want it thicker, add a few more hazelnuts.
  • Instead of using 100% brown sugar, you can make a mix of sugars, or try panela. Follow your preferences for flavors and ingredients; it can be delicious in this cream.
  • You can replace part of the oil with hazelnut oil, as delicious as it is, it will enhance the hazelnut flavor.
  • Some people like to add coconut oil; it pairs perfectly with the flavor of cocoa.
